Abstract: A residual fat remover and method for removal of residual fat that remains on tissue of a poultry carcass after the poultry carcass has passed a scraper for releasing tissue connections between a fillet or fillets and the poultry carcass, wherein the fillet or fillets still at least in part are attached to the carcass when passing the residual fat remover, and wherein the residual fat remover is embodied with opposite pens that are positioned along the path of the passing poultry carcass on opposite sides of the breastbone of the passing poultry carcass so as to detach the residual fat on the outer sides of the fillet or fillets during passing of the poultry carcass.

Abstract: A method and apparatus for removing a knee cap from a poultry part, and particularly a deboned poultry thigh, includes a plurality of bays attached to an endless conveyor and movable by the conveyor in a processing direction. Each bay includes a plate sized to support a poultry thigh and having an aperture formed therethrough. A plunger assembly includes a plunger tip that can be moved selectively into and out of the aperture by a cam mechanism. Poultry parts are placed by workers on the plates as they move in the processing direction with the knee caps of the parts aligned with and pressed partially into the apertures. The cam mechanism then moves the plunger tip of each bay into its respective aperture to press the knee cap through the aperture, where it is severed by a rotating knife. The plunger tip is then withdrawn for a successive processing cycle.

Abstract: The present invention is a method for cutting a pork leg to create a meat cut which includes an exposed bone feature and a squared face. The method for making the exposed bone feature involves trimming shank meat bare from a fibula bone and removing a tibia bone above a knee cap joint leaving a stifle joint intact. The method for making the squared face involves removing light and dark butt trim and a rump point to form a generally flat surface. When oriented downward, the flat surface aligns with any flat support surface and holds the meat cut in a standing position. The standing position directs the exposed bone feature generally upward in a unique and attractive presentation. Additionally, the present invention relates to the resultant product formed by the same method where the meat cut allows for improved roasting, braising, slow-cooking, and carving of a ham roast.
