Abstract: A bacillus composition characterized by fast germination and outgrowth in bile salts (simulated gut environment) and by high-level secretion of phytase. The bacillus composition may be used as supplement in animal feed where it has a probiotic (health promoting) effect and increases the digestion and availability of nutrients from animal feeds.
Abstract: The present invention provides a new wine yeast product in a frozen form. The product is produced in a fermenter, concentrated, cryoprotectants are added. This mixture is then frozen at ?50° C. What makes this product unique is that besides the fact that it is frozen, it can be directly added to grape juice as no rehydration is required because the yeast was not dehydrated in the production process.

Abstract: The present invention relates to the use of compositions comprising receptor ligands obtainable by a process comprising fermenting a food material, comprising animal milk or vegetable proteins, with lactic acid bacteria to obtain a fermented food or feed material that comprises ligands of specific adrenoreceptors and/or serotonin receptors. The fermented food or feed material is useful e.g. for reducing and/or stabilizing heart rate in a mammal. It may furthermore be used for treatment and/or relief of erectile dysfunctions and for treatment and/or relief of benign prostate hypertrophy (BPH), in a mammal.
Abstract: The present invention relates to the field of fermentation media. More specifically, the invention provides a method for preparing a composition useful for culturing microbial cells wherein whole and/or autolysed yeast cells are enzymatically treated to obtain the composition. The microbial cultures obtained have increased stability and are useful in the manufacturing of food, feed and as a pharmaceutical product.

Abstract: Stabilized bacteriophage compositions, and methods for preparing stabilized bacteriophage compositions are provided. The method for producing an antibacterial composition involves adsorbing an aqueous solution of one or more bacteriophages, or one or more phage components, onto a matrix to produce a composition, and drying the composition to produce the antibacterial composition. An antibacterial composition comprising one or more strain of bacteriophage, or one or more phage component, adsorbed onto a matrix is also provided. The antibacterial composition, or the antibacterial composition embedded in a solid support, may be used within a cream, lotion or gel, be admixed with a pharmaceutical carrier and administered topically, orally, nasally, used as a powdered inhalant, or the antibacterial composition or encapsulated antibacterial composition, may be added to a feed for animal, aquatic or avian uses.
Abstract: Many probiotic Bifidobacteriacea contains an active tetW that renders the cells resistant to tetracycline. This presents a theoretical risk of a horizontal transfer of functional antibiotic genes. The present invention relates to novel tetracycline-sensitive strains of the well-known probiotic Bifidobacterium animalis subsp. lactis strain BB-12® and the use of such novel strains for the preparation of a food or feed product or a dosage form comprising viable organisms.
Abstract: The present invention relates to a process for manufacturing fermented dairy products, in particular stirred milk products. The invention concerns a process for the manufacture of a fermented dairy product without any cooling step for stopping fermentation due to the use of a weakly post-acidifying lactic bacterium culture as a starter.

Abstract: Many probiotic Bifidobacteriacea contains an active tetW that renders the cells resistant to tetracycline. This may present a risk of a horizontal transfer of functional antibiotic genes. The present invention relates to a method of obtaining novel tetracycline-sensitive strains of the genus of Bifidobacteriacea (Bifidobacterium sp.). In particular, the present invention relates to novel antibiotic-sensitive strains obtained from antibiotic-resistant probiotic strains and the use of such novel strains for the preparation of a food or feed product or a dosage form comprising viable organisms.
Abstract: A method for the preparation of carminic acid lakes, novel carminic acid lake compositions and their uses in foods, such as yogurt, fruit preparations, beverages, other miscellaneous food products that may need a stable red color, and in cosmetics.
Abstract: The invention relates to an activation solution useful for incubation of microbial organisms prior to inoculation into a liquid composition, such as wine, and to a dry activation composition from which the activation solution may be produced. The activation solution preferably comprises microbial organisms capable of fermenting malic acid to lactic acid, but having impaired capability of degrading citric acid. These microbial organisms are useful in methods of inducing malolactic fermentation during wine production.
Abstract: A device for the continuous dosage of frozen starter cultures into a liquid fermentation medium is provided. The device comprises a fermentation unit and a container for the thawing of the starter cultures. It further comprises means of retaining the frozen cultures inside the thawing container while allowing the culture in liquid form to feed into a circuit for continuously feeding the fermentation medium to be inoculated. Furthermore, a method of dosing a frozen inoculant into a liquid fermentation medium is also described.

Abstract: The present invention discloses microbial organisms capable of fermenting malic acid to lactic acid having impaired capability of degrading citric acid. These microbial organisms are for example useful in methods of preferentially degrading malic acid over citric acid in a liquid composition or in methods of inducing malolactic fermentation during wine production. The invention also discloses a concentrate of these microbial organisms and methods of preparing such a concentrate. The present invention furthermore relates to an activation solution useful for incubation of microbial organisms prior to inoculation into a liquid composition, such as wine.
