Abstract: The invention relates to a process for increasing the amount of enzymes in a grain by germinating the grain in conditions in which the grain is wounded. The invention also relates to hydrolases obtainable from grains for use in food processing and manufacturing industries, to the germination of grains such as barley and to isolation of enzymes from grains.
