A database may contain records, each associated with an identifier and including a text string and timestamp. A look-up table may contain entries for text strings from the records, each entry associating: a paragraph vector for a respective unique text string, a hash of the respective unique text string, and a set of identifiers of records containing the respective unique text string. A server may receive from a client device an input string, compute a hash of the input string, and determine matching table entries, each containing a hash identical to that of the input string, or a paragraph vector similar to one calculated for the input string. A prioritized list of identifiers from the matching entries may be determined based on timestamps, and the prioritized list may be returned to the client.

    Abstract: A process for producing pure lactic acid from a whey by-product rich in lactose and minerals, for example delactosed why permeate or concentrated whey permeate, is described. The method comprises upstream steps of neutralising the whey by-product with a basic metal hydroxide to form a precipitate comprising calcium and phosphate, and separating the precipitate from the whey by-product to provide a clarified whey by-product. The clarified whey by-product is fermentated by a bacterium capable of bioconversion of lactose to lactic acid to provide a fermentation broth containing a lactic acid salt. In the downstream steps, the fermentation broth is acidified to release lactic acid from the lactic acid salt, precipitate from the broth produced by acidification is removed, and the acidified fermentation broth is treated to recover pure lactic acid by removal of residual salts, and water, and optionally protein.

Methods for preparing shelf stable k-carrageenan free chocolate milk are also provided and include mixing cocoa powder, sugar, milk, and micellar casein to obtain a mixture, and optionally heating and homogenizing the mixture, and subsequently subjecting the mixture to High Pressure Jet Processing (HPJ) or high pressure homogenization of at least 300 MPa, thereby producing the shelf table k-carrageenan free chocolate milk. The shelf stable k-carrageenan free chocolate milk of produced using such a method may be refrigerated temperature for at least 14 days, and does not undergo detectable phase separation for at least 14 days.
