  • Patent number: 6124486
Abstract: The specification discloses a process for making low calorie triglycerides. The process involves interesterifying short triglycerides having C.sub.2 to C.sub.10 fatty acid chains and long triglycerides having C.sub.16 to C.sub.24 fatty acid chains in the presence of a catalyst and without a solvent to produce low calorie triglycerides as an interesterification product of the long and short triglycerides comprising individual triglycerides wherein a substantial is portion of the low calorie triglycerides have two long C.sub.16 to C.sub.24 fatty acid chains and one short C.sub.2 to C.sub.10 fatty acid chain having at least one long C.sub.16 to C.sub.24 fatty acid chain and at least one short C.sub.2 to C.sub.10 fatty acid chain. The process enables continuous production of low calorie triglycerides with recycle of catalyst and unreacted starting materials for an economical mode of operation with improved product yield and quality.
