    Abstract: The object is to provide a soybean protein hydrolyzate which can be produced by hydrolysis of a soybean protein produced by “method B” as defined in the description and produces no dreg even when refrigerated under acidic conditions, particularly a soybean peptide mixture having a relatively low molecular weight. Disclosed is a method for production of a soybean peptide mixture, comprising the steps of: (a) extracting a concentrated soybean protein with water to yield an extract; (b) treating the extract with a protease under alkaline to neutral conditions; (c) further treating the resulting product with a protease under acidic conditions; (d) treating the resulting product with a phytic acid (phytase)-decomposing enzyme; and (e) separating and removing an insoluble material from the product.

    Abstract: It is intended to establish a method whereby beers with strong taste and rich beer flavor can be produced even by using a malt extract in a reduced amount. Namely, a method of producing beers characterized by adding a soybean peptide, which is prepared by hydrolyzing soybean protein with an acidic or neutral enzyme originating in an organism belonging to the genus Aspergillus, to the fermentation material followed by yeast fermentation. Thus, it becomes possible to produce beers with rich beer flavor even at a malt extract concentration of 9 Brix or lower.

    Abstract: An object of the present invention is to provide a process for producing a sterilized enzymatic decomposition soybean protein with facilitating separation of a precipitate after decomposition of soybean protein with an enzyme, and with improving a yield of the enzymatic decomposition product, thereby minimizing formation of the dregs upon using in drinks and so on. Said process comprises adding a proteolytic enzyme to a soybean protein solution to effect hydrolysis, heating and cooling the hydrolyzation mixture, separating and removing insolubles from the mixture and heat-sterilizing the resultant supernatant.
