    Abstract: The present invention relates to the use of liquid stabilized, high lactose, high pH whey as an ingredient in the standardization of a dairy product; and a process for the manufacture of a dairy product comprising the steps: a) obtaining liquid stabilized, high lactose, high pH whey, in particular from the coagulation of casein in milk; and b) admixing the stabilized, high lactose, high pH whey obtained in step a) with one or more ingredients comprising: vegetable fat(s), animal fat(s), vegetable protein(s), animal protein(s) and natural or artificial sweetener(s), such as natural or artificial sugar(s), fruit and fruit juice. The use and the process according to the invention accordingly enable a more direct utilization of the valuable constituents of whey obtained from cheese production.

    Abstract: A delivery system for nutraceuticals uses a low caloric chocolate base for containing one or more nutraceuticals, either blended with the chocolate itself, or added as a liquid or crème filling. The chocolate has a relatively high level of oligomeric proanthocyanidins, and preferably further includes a phytosterol and DHA, as well as being sweetened with a sweetener blend containing tagatose and a secondary low caloric, high intensity sweetener, preferably Lo Han Guo extract. Using the inventive system, delivery of nutraceuticals in unit dosage form is facilitated, as the selected dose is carried within individual chocolate product pieces that taste substantially the same as conventional chocolate, though with few calories from carbohydrates, or effects on insulin response encountered with typical chocolate formulations.

    Abstract: The applicants have discovered that consuming milk-based protein, carbohydrate, Vitamin D, calcium, and CLA in combination and in the relative concentrations disclosed herein results in a beneficial synergistic impact on body composition. It is believed that each component is directly or indirectly utilized in metabolic pathways which alter body composition in beneficial ways that would not be realized if one or more of the components were delivered separately and/or in concentrations other than those disclosed herein. Conventional food and beverages do not deliver the combination of these components in concentrations that maximize the synergistic potential.
