    Abstract: Disclosed is a method for producing patterned compound food products that realizes production, by simple control, of food products having a surface color pattern, enclosing a food material of a taste different from that of the food material forming the outer section, and having excellent appearance without seams on the surface. The method includes: (A) pouring predetermined amounts of at least two kinds of fluid food materials of different colors for forming the outer section into a cavity of a mold to obtain a preshaped product in a substantially fluid state held in the cavity shape; (B) inserting a nozzle into the preshaped product; (C) injecting a predetermined amount of fluid filling material for forming the inner section through the nozzle into the preshaped product; (D) drawing the nozzle out of the preshaped product; and (E) solidifying, after (D), at least the fluid food materials in the cavity.

Also disclosed are an apparatus and method for manufacturing the decorative food.

    Abstract: A method for producing a molded chocolate product having a complicated concaved and convexed decorative pattern thereon involves the steps of: (a) charging a low viscosity fluidized chocolate material into a complicated concaved and convexed decorative pattern portion of an elastic mold in bag form for forming the complicated concaved and convexed decorative pattern of the chocolate product so that air bubbles necessarily incorporated into the low viscosity fluidized chocolate material ascend therethrough so as to be removed, (b) charging an ordinarily tempered fluidized chocolate material into the elastic mold to form a main body of the chocolate product, and (c) solidifying the low viscosity fluidized chocolate material and the ordinarily tempered fluidized chocolate material charged into the elastic mold followed by taking the molded chocolate product out of the elastic mold.

The chocolate block includes an ornamental relief pattern made of first chocolate material of one color and a body portion carrying the relief pattern and made of a second chocolate material of different color. The second chocolate material adhering on the face of the first mold is cleaned by cleaner means such as a roller, scraper or a rinsing chamber.

    Abstract: A continuous and automatic process for molding chocolate blocks each having an ornamental relief pattern of one color and a body portion of different color carrying the relief pattern is provided. Also, there is provided apparatus for continuously and automatically producing such ornamental chocolate blocks. A first chocolate material for forming the ornamental relief pattern is cast into a first mold and scraped to scrape off the excess chocolate material. A second mold is then placed on the first mold and a second chocolate material for forming the body portion is cast into through-openings of the second mold. The second chocolate material inevitably oozing into the interface between the first and second molds adheres only onto a rough surface portion formed around and surrounding the through-openings of the second mold without the second chocolate material adhering onto the first mold. It is thus not necessary to remove the oozing chocolate material from the first mold.

    Abstract: A process for molding chocolate is provided to make a molded product including a thin ornamental relief pattern of a first chocolate material of one color and a body portion carrying the ornamental pattern and made of a second chocolate material of the other color. The first and second chocolate materials contain 30 to 40 wt. % of base oils and fats and at least 60 wt. % of the oils and fats in one material is the same as those in the other material. The first material in a fluidized state is cast into an engraved ornamental pattern formed on a mold, followed by scraping the face of the mold and rapidly cooling the surface of the first chocolate material to 18.degree. to 22.degree. C. Then the second chocolate material in a fluidized state is cast on the mold to cover the first chocolate to thereby firmly bond or adhere the two materials.
