    Abstract: A method of preparing nutritionally fortified yeast comprising: a) incubating yeast with at least one fermentable substrate under conditions suitable for achieving fermentation; b) isolating the yeast after fermentation; c) combining the isolated yeast with at least one micronutrient selected from vitamins, minerals, amino acids and antioxidants to obtain nutritionally fortified yeast; and d) drying the nutritionally fortified yeast.
