    Abstract: A method of enzymatic extraction of chitin is realized in a single step wherein the chitin is obtained by enzymatic hydrolysis of raw material constituted by animal biomass including chitin, the enzymatic hydrolysis using an enzyme active in acid medium.     Abstract: Exopolysaccharides, preferably obtained by fermenting bacteria from deep hydrothermal ecosystems, serve as agents for preventing the formation of unwanted biofilms on a surface. A method for protecting a surface by preventing the formation of the primary film leading to unwanted biofilms, includes placing the surface in contact with at least one exopolysaccharide, or grafting the exopolysaccharide onto the surface. A method for modifying the physical properties of a surface such that the adhesion of an unwanted bacterial biofilm to the surface is reduced is also described.
