  • Patent number: 11330827
Abstract: A method for producing herb cheese, in particular for producing hard cheese, which is enriched with herbs, spices or the like, with the herbs introduced by machine. For this purpose, raw cheese mass having about 80% milk removed is filled into cheese molds, which are preferably arranged in a vat of a cartridge press, and subsequently pressed. At the same time, respectively, herbs, spices or the like are introduced uniformly into the cheese molds parallel to the raw cheese mass.

  • Patent number: 10785953
Abstract: A method and device for handling cheese blocks, which in particular can be assigned to a so-called cassette press with round or cornered cheese moulds. A rapid reloading of cheese blocks can be achieved. Compressed cheese curd is released from the inner wall of a mould and after a turning operation is evacuated from the mould, with the mould rotated, lowered and shaken or blown. Before the shaking or blowing, a pick-up plunger retracts into the mould up to the cheese block; the mould is then raised, rotated and guided back into the cheese press. The pick-up plunger with the cheese block is then lowered and the cheese block is fixed in position on the pick-up plunger by a clamping unit, is swivelled through 180° towards a secondary mould and is guided, i.e. pushed into the latter; the clamping unit is then opened and the pick-up plunger retracts.

Abstract: A method and device for handling cheese blocks. Compressed cheese curd is released from the inner wall of a mould and after a turning operation is evacuated from the mould, with the mould rotated, lowered and shaken or blown. A lifting gripper is guided as far as the stop on a pick-up device, and in the mould the cheese block is subjected to a shaking movement. The mould, that is to say, the cassette, is then raised, rotated and guided back into the cassette press, so that the cheese block can be fixed in position on the lifting gripper by a clamping means. The pick-up plunger with the cheese block is then lowered, that is to say, retracted, the lifting gripper is traversed towards a secondary mould for the cheese block, preferably downwards, the clamping means open, and the cheese block is positioned in a secondary mould.

  • Patent number: 10729095
Abstract: A cheesemaker with a container interior in the form of a cheese vat or cheese kettle, which rotatably incorporates a driven agitator with at least one agitating and cutting blade. The cheesemaker is to be simple in structural design and easy to operate, and also satisfy strict hygiene requirements. This is achieved by providing the agitating and cutting blade with a window that can be detached therefrom, and moved relative to the agitating and cutting blade.

  • Patent number: 9968070
Abstract: A press cover for a cheese mold, in particular for a cheese mold of metal, having a round or polygonal cross section. The shape and dimensions of the press cover correspond to the inner cross section of the cheese mold. The press cover is to be designed in a simple manner, to withstand a press power, and also to satisfy high hygiene demands. This is achieved in that the press cover includes a perforated plate, the shape and dimensions of which corresponds to the inner cross section of the cheese mold, on which a reinforcing rib structure is arranged.

  • Patent number: 9713314
Abstract: The invention relates to a press cover for a cheese mold, particularly for a cheese mold (1, 12) made from metal with a round or polygonal cross section, wherein the shape and dimensions of the press cover (1) match the inner cross section of the cheese mold (1). It should be of simple construction, able to withstand high pressing force, and also satisfy stringent hygiene requirements. This is solved in that the press cover (1) comprises a perforated plate (22) and a frame (30) with is provided on the periphery of the press cover (21), which frame has a movable outer ring (33) arranged on the outside thereof, which ring lies flush against the inner wall of the cheese mold (1, 12) and creates an effective seal therewith when the raw cheese mass is pressed out. The press cover (21) is also provided with a stiffening frame and rib structure (23, 24, 30).

  • Patent number: 9049837
Abstract: The invention provides a cheese mold, in particular a cheese mold composed of plastic or metal, for arrangement in a cassette press or the like. The mold should have a simple structure, and at the same time withstand the pressing pressure and also satisfy high hygienic demands. This is advantageously achieved in that the base of the mold is provided with a rib structure as far as the transition region of the outer jacket wall, wherein the mold can be round or cylindrical or angular in cross section. In the case of a round mold, longitudinal ribs extend radially, starting from the longitudinal axis over the base and continuously as jacket ribs into the region of the jacket wall.

  • Patent number: 8916221
Abstract: A method for producing cheese and a device therefore, in particular what is known as a cassette press with round or angular cheese molds. The method is intended in particular to achieve gentle and hygienic de-molding of the cheese blocks after removal of whey. A raw cheese mass is first poured into molds of a cassette press, then pressed to remove liquid and emptied out of the mold after a turning process. Directly after turning, the raw cheese mass in the mold is subjected to a shaking movement, so the pressed raw cheese mass is detached gently from the inner wall of the mold.
