    Abstract: Preparation of xanthan gum is effected by dispersing the aqueous xanthamonas culture medium in a water insoluble oil such as a hydrocarbon or vegetable oil. Such dispersions generate substantially less viscosity and as a result, fermentation can be carried out to a higher polymer content with less energy input.
