Abstract: The present invention relates to products obtained from crude olive pomace oil by centrifugation or decantation of the pomace, wherein said products contain a specific composition of triterpenic acids (especially maslinic and oleanolic acids), fatty acids, and ethyl esters; these products are suitable for use as additives in human or animal food products or in cosmetics products.
