Abstract: A method for fractionating or separating a cheese uses heat and mixing of the cheese to separate the cheese into three phases. The three phases include a butterfat phase, an aqueous phase, and a cheese product from which some fat and flavor have been removed. The process may be hastened by adding water, and may be further hastened by using enhanced gravitational forces to effect separation of the portions. The process may also be used to remove undesirable flavor components from the cheese or to make a dairy spread.
Abstract: A method and apparatus shapes a body of cheese into curved bodies of cheese. A preferred dual-wire cutting machine implementing this method generally includes a conveyor assembly; a set of mechanical aims, two vertically strung harp wires, each of which is connected to a mechanical aim; and a drive assembly. The conveyor assembly moves an elongated body of cheese through the dual-wire cutting machine in a horizontal direction. During movement of the body of cheese, the drive assembly moves each mechanical arm in synchronization with the conveyor assembly. Due to the harp wire attached to each mechanical arm, the movement of each mechanical aim creates a cut in the elongated body of cheese, which forms curved bodies of cheese within the elongated body of cheese. Preferably the body of cheese is made of stacked layers of cheese, which may or may not have the layers offset from one another.

Abstract: A method of making a processed cheese with improved firmness comprises mixing a protein cross-linking enzyme and optionally first other ingredients with a cheese material having a pH of less than 5.6, a moisture content of less than 60% and preferably containing one or more coagulating agents, to form a mixture; providing temperature and pH conditions and allowing time for the enzyme to react with protein in the mixture to cross link at least a portion of the protein; and combining one or more emulsifying agents and optionally second other ingredients with the mixture and heating the combination to thereby produce processed cheese from the combined cheese material contain cross-linked proteins, emulsifying agents and optional first and second other ingredients.

Abstract: A hermetically sealed package for food items, such as loaves of processed cheese, employing plastic film with serrated ends and an accessible tear strip, which together provide points of focus for easy opening of the package without unwanted tearing or undesirable contamination of the food item. Abstract: The present invention is therefore directed to a method and apparatus for warming a stack of cheese slices. In accordance with the invention, the stack of cheese slices is positioned between and in juxtaposition with opposing generally planar electrodes, each of the electrodes having a surface area generally coextensive with that of the cheese stack. Next, a conductive material is interposed between each electrode and the cheese stack to reduce contact resistance. Once properly assembled, an electric current is passed between the electrodes, through both the conductive material and the cheese, thus warming the individual cheese slices through ohmic heating. In accordance with one embodiment of the invention, the conductive material is a moistened paper sheet.
Abstract: A method for packaging food items, such as processed cheese, into a plastic film package that entirely encloses the food item with peelable heat seals, such as hermetic peelable heat seals. The heat of the food item is used to activate a sealant within the plastic film. Plastic film formulations are provided for this purpose.
