Abstract: A process for the separation of sialic acid and glycoproteins from dairy or casein factory whey. The proteins are flocculated by thermal treatment, the supernatent is ultrafiltrated and the ultrafiltration retentate is treated by hydrolysis, and the sialic acid is then extracted from the hydrolysis supernatent.
