The ingredients may include vegetable components that offer organoleptic properties similar to those of fresh vegetables after an extended period of time. Ideally, time required for processing, shipment, storage, etc., which may be, e.g., several weeks, may pass without unacceptable degradation of taste, texture, mouth feel, flavor, aroma, color, nutritional content or other important qualities. In some embodiments, the ingredients may also include additional components, such as, for example, one or more meats, and/or one or more varieties of cheese.

    Abstract: Encapsulated polyphenolic compounds and a method of making said encapsulated polyphenolic compounds are provided. The encapsulated polyphenolic compounds include polyphenolic compounds encapsulated in natural fibers, the encapsulated polyphenolic compounds imparting improved stability to the encapsulated polyphenolic compounds. The polyphenolic compounds may be extracted from natural sources, such as pomegranate peels. The encapsulating natural fibers may also be obtained from natural sources, such as orange peel fibers. The method of encapsulation includes mixing an extract containing polyphenolic compounds with ground, dried orange peel powder, freeze-drying the mixture to obtain a first encapsulated polyphenolic compound, and mixing the first encapsulated polyphenolic compound with the extract containing polyphenolic compounds and repeating the freeze-drying to obtain the final encapsulated polyphenolic compounds.

The oil component is extracted from mucilage removed chia seeds and the leftover is hydrolyzed in presence of an enzyme to afford a product of protein hydrolysates and a product of insoluble fiber of chia seeds. A method for reducing bacterial load on meat or poultry includes generating a plurality of zones within a chiller bath containing water by dosing a source of alkalinity and antimicrobial into the water, wherein the plurality of zones comprises at least one alkaline zone with a pH above 8.5, and at least one antimicrobial zone with pH below 8.5; and submersing meat or poultry in the bath. The zones can also be generated using spray nozzles in a meat or poultry operation.

The result is hot melt extruded into a filament with a diameter of 1.75 mm or 3 mm. When printed, the thermoplastic has good strength, stiffness, and physical properties, and can be 3D-printed in any shape.
