    Abstract: The present disclosure provides a confectionery product having a crunchy, hard-coated outer shell that encases a chewy core portion. The core portion may include one or more of gel components. Each gel component may contain a gelling agent and a flavor. The gelling agents for each gel component may have a different property to provide each gel component with a different flavor release rate upon mastication thereby producing waves of flavor throughout the entire product chew. In addition, the coating portion may include a sensation producing ingredient that provides an initial sensory burst to the consumer.

    Abstract: Shaped chewing gum products are made by mixing guru base, amorphous bulk sweetener and crystalline bulk sweetener together to form a fluid composition and molding that composition into desired shapes. The molding may be accomplished by making multiple depressions in a bed of powder material, each depression having a desired shape; depositing the fluid composition into the depressions at a temperature at which the fluid composition will fill into the shapes of the depressions; allowing the fluid composition to set up to a consistency wherein the composition maintains the shape of the depression to form the shaped chewing gum products; and separating the shaped chewing gum products from the powder material. The chewing gum composition may be combined with another confectionery material to make a composite product.

    Abstract: A center-filled jelly product is made with (a) a liquid filling containing between about 0.5% and about 5% flavor and (b) jelly material completely encasing the liquid filling, the jelly material comprising between about 9% and about 19% gelling agent. The liquid center filling provides the product with a strong initial flavor impact when bitten into. In an embodiment, the outer jelly material is transparent, and maintains a well-defined boundary with the liquid center filling. The outer jelly material provides a chewy texture to the product.

    Abstract: The invention relates to chewing gum or soft caramel and the production method thereof. The inventive method consists in producing a continuous strand of a product comprising chewing gum or soft caramel, said strand being in the form of a channel. A sheet comprising a liquid product that gels in a reduced amount of time is deposited inside the channel. Said method can be used to produce individual units of said product by cutting the aforementioned compound strand. The sheet of gelled product is perfectly visible in each of said units as it remains on the surface of three of the sides of the chewing gum, said gum being laterally fixed to the sheet of gel in order to prevent the sheet from separating easily.
