    Abstract: A supportive addition to reference application Ser. No. 09/225,229 where alternative air distribution devices are used to connect multiple bores in cored oak slabs used for the aging of wine. Example configurations are shown including manifolds, air loops or air caps, all of suitable food grade materials. The disclosure also describes a voided out oak slab which does not rely on bores to bring air to the interior of the oak slab and an oak slab that has transverse slots to increase oak surface in contact with wine.

    Abstract: A superior device for maturing wine which utilizes one or more cored oak slabs inserted into airtight containers of various volumes and materials whereby controlled oxidation of the wine may occur through the oak without prospect of air contamination or excessive loss of wine volume. The disclosure describes application to volumes ranging from 5 gallons to 5000 gallons (and more) and to vessels made of food grade plastic, stainless steel or white oak.
