    Abstract: A method for producing ghee involves churning cream to form butter and buttermilk, which is melted and heated to a temperature of 45° C. and 90° C. Phase inversion by shearing is performed to form an oil, which is concentrated by centrifugal separation into an oil fraction and a serum fraction. The oil faction is boiled and at least one milk product is supplied. The boiled oil is clarified to produce ghee having a fat content of at least 99.0 wt. %.
