    Abstract: The method involves turning the fish (4) around its own axis while a cutting blade is longitudinally displaced along the body of the fish and contacts the latter in such a way that the blade follows a helicoidal trajectory in relation to the skin of the fish thereby making it possible to fully skin the fish. To this end, the device has a pair of clamps (7-7′) to fix the fish in vertical position and preferably with the head facing downward. The clamps are aided by a rotational actuator (10) delivering said movement to the fish while the blade (11) is permanently pressed on the fish by a spring (17) and is moved along the fish by a cylinder (16) or any other appropriate means. The arm (13) is rotated on a support (15) located at mid-height and can be displaced transversally by a cylinder (19) so that the blade can permanently work in an imaginary plane (21) perpendicular to the axis of the fish.

    Abstract: A fruit pitting machine includes a feeder tray for feeding fruit singly to a fruit conveyor chain which travels around a rotatable support to convey the fruit along a feed path. The rotatable support carries a plurality of pitting plungers and coring knives which are axially aligned and movable by cams toward each other such that a plunger pierces one end of the fruit and a coring knife cuts out a core cap at the other end of the fruit. Thereafter, the pitting plunger pushes the core cap and pit into the coring knife and the pitting plunger and coring knife are retracted away from the feed path. The plunger is retracted with the pitted fruit thereon past a guide member which strips the pitted fruit from the plunger while the coring knife is retracted until a free end thereof is positioned between another guide member and a pitting chain which is rotated around the rotatable support.

    Abstract: A method for inserting tops for closing pitted fruit includes the steps of placing a piece of food on a conveyor belt, sliding the piece of food under a viewer, detecting the size and the position of the piece of food, supplying information on the position of the piece of food from the viewer through an electronic circuit to a die-cutting head, die-cutting the piece of food to obtain a segment thereof, cutting the segment into strips, transferring the strips to another conveyor belt, aligning the strips longitudinally on this other conveyor belt, supplying the aligned strips to a drum provided with a plurality of chambers, cutting the strips into closing tops, pitting a fruit in a pitter machine, placing the closing tops into housings in a turning plate, synchronizing the turning of the housings in the turning plate with the turning of the pitter machine, and stuffing one of the closing tops into the mouth of the pitted fruit.

    Abstract: In an improved machine for pitting olives and then filling them with a paste, such as an anchovy paste, the olives are supplied from a hopper to a drum rotating on a fixed shaft. As the drum rotates, the pits are displaced out of the olives into orifices in nozzles mounted on the drum. The nozzles are radially displaceable. In addition to the pit containing orifices the nozzles also contain other orifices through which the paste is fed into the olives. The paste feeding orifices are spaced radially from the pit containing orifices in the nozzles. Paste is supplied from cartridges to radial slots in a feed disc and then into the nozzles mounted on the drum. The feed disc is mounted on a shaft spaced laterally from and parallel to the shaft for the drum.

    Abstract: An olive pitting and stuffing machine has a drum rotatable about an axis and provided with opposing pairs of clamping members angularly equispaced about the axis and respectively engageable with opposite ends of olives fed in succession generally tangentially to the drum. The drum also comprises respective tubular cutters axially aligned with each pair of clamping members and displaceable to cut an end out of the olive, a plunger axially aligned with each pair of clamping members on the opposite side of the drum adapted to pierce the olive through the other end and push out the olive pit, and a pimento inserter also aligned with the clamping members and effective to insert a folded piece of pimento as the stuffing in the interior of the olive.

    Abstract: An olive pitter and stuffer comprising a machine structure which includes two sets of pitting plungers disposed along one side each of respective chains for carrying the olives into alignment with these plungers. On the other side of each chain is an olive-opening device aligned with the pitting plunger for cutting an opening through which the pit is ejected by the plunger. The olives are then transported by the plunger to a pair of stations at which mechanisms maintain the opening of the olives while further plungers insert respective stuffings in the olives. According to the invention, a pair of mechanisms are provided with respective chains, all operated by a synchronous drive so that the output of the machine is doubled.
