    Abstract: A crispy and puffy snack food, such as a chip, and method of making the same is disclosed. The method includes mixing potato flour with oil and water and cooking the mixture; adding more water and extruding the cooked mixture; rolling the extruded mixture to a sheet; cutting the sheet into shapes; drying the shapes; puffing the shapes; and optionally coating the puffed shapes with oil, salt, and/or seasonings. The shapes may be round or polygonal with a diameter or sides about 1.3 to about 5 cm in length and have a bulk density of about 60 to about 120 g/L and an undulating surface due to trapped air pockets. The snack food can include other vegetable ingredients and flavorings.

    Abstract: The present invention includes a stable low density frosting composition having a density that ranges from about 0.65 grams per mL to about 0.95 grams per mL that contains a sweetening component, a plastic shortening component, an emulsifier component, a stabilizer component, and a liquid component. The present invention further includes a method of making the low density frosting by homogeneously blending each component to form a homogeneous frosting slurry followed by aerating to form the low density frosting composition.

    Abstract: The present invention provides flaked food material products including from about 10 to about 95% by weight of a cereal flour, from about 2 to about 20% by weight of water, and from about 5 to about 50% by weight of a soy protein. In preferred embodiments, the soy protein isolate is at least partially hydrolyzed soy protein in which the soy protein is hydrolyzed either during isolation or subsequent to isolation in further processing of the soy protein isolate. In alternate embodiments, the preferred soy protein isolate will have a viscosity of less than 800, preferably less than 400 CPS at 25° C. at a shear rate of ten seconds on a Brookfield viscosity meter when the concentration of the soy protein isolate in de-ionized water is at least about 8%, preferably about 10%, more preferably about 12% and most preferably about 14%. Oat containing clusters and granola bars containing such flaked food material are also provided.

    Abstract: Disclosed are multicolored cereal pieces and methods of preparation. In preferred embodiments, the cereal pieces have an upper layer and a bottom layer, at least one of which layer is characterized by regions of a plurality of different colors. The methods for fabricating the present multicolored cereal pieces involves preparing separate segregated quantities of low moisture, free flowing cooked cereal dough pellets of individual colors, separately cooling the separate quantities of pellets, admixing the separate batches while cool with low shear mixing to form a blended assortment of multicolored free flowing pellets, warming the pellets, sheeting the pellets to form a sheet with regions of various colors, forming individual pieces from the sheet and finishing the pieces to form R-T-E cereals with multiple colors.
