These baked cookies comprise calcium lactate coated psyllium fiber, insoluble dietary fiber, shortening, flour, sugar and water. Eating quality of these psyllium-containing cookies is especially enhanced by their reduced tendency for the composition to stick to and/or form a film on teeth during ingestion.
