Publication number: 20220287314Abstract: A once-through baking oven has a plurality of oven modules which together form a once-through baking space. A heat-exchange heating device for indirect heating of the once-through baking space has a heating medium outward-flow pipe arrangement, a heating medium return-flow pipe arrangement and at least one intermediate radiator pipe arrangement having a plurality of heat exchanger pipes The heating medium flows in two adjacent heat exchanger pipes in opposite flow directions to each other. In an alternative embodiment of the radiator pipe arrangement, it runs in a spiral or meander shape in such a way that the heating medium flows in two adjacent pipe sections in opposite flow directions to each other. This results in a once-through baking oven that can be operated efficiently and adapted to different throughput requirements.Type: ApplicationFiled: July 21, 2020Publication date: September 15, 2022Applicant: Werner & Pfleiderer Industrielle Backtechnik GmbHInventors: Dieter KNOST, Ulrich SPECK

Publication number: 20190373899Abstract: A conveyor baking oven for continuous baking operation has at least two conveyor baking spaces. A plurality of oven modules of the baking oven have baking spaces, which combine to form the conveyor baking spaces between a respective initial oven module arranged in a leading manner when seen in the bakery product conveying direction, and a respective final oven module, which is the last in row when seen in the bakery product conveying direction. The oven modules have a multi-level arrangement such as to define the at least two conveyor baking spaces. A bakery product conveyor device is used to continuously convey bakery products through the conveyor baking spaces. A thermal oil heating device having at least one thermal oil heat exchanger is used to heat the conveyor baking spaces by radiant heat. The resulting conveyor baking oven is operable efficiently and adaptable to various throughput requirements.Type: ApplicationFiled: June 5, 2019Publication date: December 12, 2019Inventors: Dieter Knost, Ulrich Speck

Publication number: 20110100180Abstract: A device for portioning a plurality of dough strands into individual dough portions operates as follows: firstly, the produced dough strands, which are transported by a conveyor device, are measured with respect to their volume by a measuring device. Afterwards the dough strands are cut by means of a cutting device as a function of the measurement result into dough portions. This results in a dough portioning where the precision of the portioning is improved.Type: ApplicationFiled: September 30, 2010Publication date: May 5, 2011Inventors: Herbert Mülders, Dieter Knost
