    Abstract: A soy protein-containing dry cheese sauce mix containing significant levels of soy protein is provided. The dry cheese sauce mix is prepared by mixing soy flour with dried cheese and cheese flavoring. When used, the dry sauce mix is hydrated to form a cheese sauce suitable for use with starch-based products (e.g., pasta, rice, and the like). The soy protein-containing dry sauce mix of this invention generally contains about 10 to about 75 percent soy flour, about 25 to about 90 percent cheese powder, and about 1 to about 5 percent cheese flavoring. Preferably, the soy protein-containing dry sauce mix contains about 25 to about 50 percent soy flour, about 25 to about 50 percent cheese powder, and about 1 to about 5 percent cheese flavoring.     Abstract: A parallel high throughput method and kit for the discovery of small molecule interactors of target proteins, in particular, target proteins expressed from entire genomes or subsets thereof. The target module is prepared by binding selectively a target protein, modified to allow its detection, to a surrogate ligand that is linked to an individually detectable bead. Sets of target modules are mixed together in each chamber of a multi-chamber container. A test compound or collection of test compounds is added to each chamber, and the interaction of a compound with each target module is observed. A compound that is specific for a particular target protein will displace that protein from its target module. The identity of the target module so disrupted is determined by identifying the particular bead to which the displaced target protein was attached.

    Abstract: Methods and apparatus are directed to positioning proximate cooling units in novel ways in refrigerated food service and display units. Preferred embodiments include one or more of the following: (1) positioning the top of a side-pan cooling element above the top of an adjacent food pan; (2) positioning at least a portion of a side-pan cooling element above a portion of the opening of a food pan; (3) positioning multiple side-pan cooling elements between adjacent food pans; (4) movably positioning a side-pan cooling element relative to an adjacent food pan; (5) positioning a plate type side-pan cooling element as a non-linear divider among adjacent food pans, and (6) providing a pan cooler with a low capacity fan which allows cooled air to be recirculated about the food pans substantially independently of air circulation within any storage area of the refrigeration unit. In most preferred embodiments, the pan cooler has a finless sub-pan cooling element.

    Abstract: A nondestructive method, and associated apparatus, are provided for determining the grain flow of the grains in a convex curved, textured polycrystalline surface. The convex, curved surface of a polycrystalline article is aligned in a horizontal x-ray diffractometer and a monochromatic, converging x-ray beam is directed onto the curved surface of the polycrystalline article so that the converging x-ray beam is diffracted by crystallographic planes of the grains in the polycrystalline article. The diffracted x-ray beam is caused to pass through a set of horizontal, parallel slits to limit the height of the beam and thereafter. The linear intensity of the diffracted x-ray is measured, using a linear position sensitive proportional counter, as a function of position in a direction orthogonal to the counter so as to generate two dimensional data. An image of the grains in the curved surface of the polycrystalline article is provided based on the two-dimensional data.

    Abstract: Disclosed is a pan cooler for a refrigeration unit which has a plurality of pans 22 which hold food removably mounted in the refrigeration unit. There is an opening 20 in the top wall 18 of the unit's cabinet 12 designed to enable the pans to be seated in the opening. Location means seat an individual pan 22 in one of a plurality of predetermined pan positions in the opening, and an individual pan, when in a predetermined pan position, is seated in the opening 20 so that substantially the entire lower body of the pan is disposed within the cooling chamber 16 of cabinet 12. The location means allows an individual pan 22 to be removed from the opening 20 and then reseated in the opening. A plurality of cooling elements 54 are disposed at the opening 20 in close proximity to the pan positions and mounted so that substantially the entire cooling element is disposed within the cooling chamber 16.

The condenser assembly comprises a plurality of modular panel elements mounted in a V-shaped configuration with the apex of the V-shaped panel configuration being near the bottom of the housing and the mouth of the V-shaped panel configuration pointing upwardly towards the top of the housing.     Abstract: An apparatus and a method for making ice are disclosed wherein ice forms on two sides of a plurality of freezing plates which are vertically arranged within a housing. A water distribution chamber positioned immediately above the freezing plates includes a plurality of inverted "V" shaped ridges in a bottom portion thereof. Each ridge corresponds to one of the plurality of freezing plates and includes a series of orifices arranged to direct water onto each side of the corresponding freezing plate. At the bottom of each freezing plate is a plastic strip which prevents ice slabs from the two sides of the plate from joining together at the bottom. Beneath the ice plates is a rotating sizer which fractures the ice slabs from the plates into pieces having a predetermined maximum size. The pieces fall through the sizer onto a screw conveyor which cooperates with a perforated lower housing to remove small undesirable ice pieces from the fractured ice.
