  • Publication number: 20040021019
Abstract: The shredding machine operates according to the mincer principle. The machine has a filling hopper for receiving the material to be shredded, a feed screw, a working screw and a following cutter set, in which the feed screw is mounted below the filling hopper in a housing of the shredding machine. The working screw is detachably connected in non-rotary manner to the feed screw. Between the feed screw and working screw is provided a precutting device and a split pressure housing surrounding the working screw is pivotably held on the housing. On a discharge-side end section of the pressure housing is detachably held a block cutter set, which alternately has coaxially arranged rotary and stationary cutting elements. The rotary cutting elements being located on a knife shaft connected in detachable, non-rotary manner to the working screw.

  • Patent number: 6007007
Abstract: The invention relates to a cutter assembly for use in a meat grinder which consists of a disc perforated by bores of diameters which vary over the length of the bores thereby to provide dwell and massage zones and a rotatable knife in sliding engagement with one of the surfaces of the disc, the knife consisting of a peripheral ring and a hub with a plurality of evenly spaced first knife blades extending from the ring toward the hub, a plurality of evenly spaced second knife blades extending from the hub toward the ring, and a plurality of evenly spaced third knife blades extending from the hub to the ring, the knife blades forming between them cutting zones. The configuration of the perforations and the knife blades ensures cutting raw materials into particles of uniform size.

  • Patent number: 5996917
Abstract: The invention relates to a cutter knife adapted to be mounted on a rotatably drivable knife shaft of a meat cutter machine. The blade of the knife is provided with at least one convexly configured margin with a cutting edge therein and a plurality of openings disposed in predetermined relationship relative to the cutting edge, the openings being in longitudinal section of substantially concave configuration and reduce the mass and surface area of the blade from about 15% to about 30% and from about 20% to 50%, respectively, thereby reducing heat accumulation and retention in the blade.

  • Patent number: 5953984
Abstract: A meat diminution and emulsifying apparatus comprising a housing having a plurality of interconnected chambers for rotatably receiving feed screws and rotary cutter assemblies therein, said feed screws and cutter assemblies being sequentially arranged and being provided intermediated two sets of rotary cutter assemblies with a chamber within which meat may be mixed and kneaded and provided with spices and other additives. The sequentially arranged cutter assemblies provide for progressively finer chopping of meat. A filler is provided at an output of the final cutter assembly for feeding chopped product into casings, and a conduit is provided between the output of the final cutter assembly and a feed screw ahead of it for recirculating meat for repeated chopping.

  • Patent number: 5944267
Abstract: An apparatus for removing gristle and the like from meat during a chopping operation in a feed screw apparatus having at least one axially perforated disc with a rotary bearing for receiving the hub of a rotary knife. A channel extends radially through the disc from the rotary bearing to the outside of the apparatus for discharging the gristle fed into it by the rotary movement of the knife arm extending from a hub journalled in the rotary bearing into engagement with a planar surface of the disc.

  • Patent number: 5894999
Abstract: A food processing apparatus useful as an attachment of meat grinders to provide an extension of the pressure barrel thereof. Within the extension, there is provided a feed screw the flutes of which have openings of predetermined sizes, preferably disposed in peripheral sections of the flutes, for imposing multiple sequential divisions and reverse flow on at least part of the main material flow, thereby uniformly to emulsify the material before a final chopping action by an additional rotary cutter assembly disposed near the output end of the attachment.

  • Patent number: 5820041
Abstract: A suspension arrangement for rotatable feed worms of food cutting apparatus and knives mounted thereon for rotation thereby. The feed worms are provided with coaxially extending bearing pins which are mounted for resiliently biased movement in a coaxial recess of the worms and which are journaled in bearings provided in a cutting disk. Releasable means are provided for moving the cutting disk relative to the bearing pin and knife mounted thereon.
