    Abstract: A pasteurizer for foodstuff mixtures comprises a tank with which are associated heating, cooling and mixture circulation means. The tank (11) is ellipsoidal in shape with a bodyshell (12) and a base (13), and the said mixture circulation means comprise an auger-type device (15) mounted adjacent to the base (13), which is in the form of a disc (16) and is slightly drawn so as to have a tapered circumferential edge (17). From the upper side of the disc (16) there extend tabs (18) which form respective mixture aspiration ports (19), while below the ports (19) there extend respective centrifugal blades (20), which move the aspirated mixture through the ports (19).

    Abstract: An evaporator for coolant fluids comprises two tabular elements of different diameter that are inserted coaxially one into the other so as to form a circumferential space within which coolant fluid can circulate. The said space is subdivided into a plurality of adjacent annular chambers by means of a series of annular baffles force-fitted in a sealing manner between the said two tubular elements. The said annular chambers intercommunicate by means of at least a bore made in each of the said baffles, the bore of one baffle being made diametrically opposite the bore in the adjacent baffle. At the opposed ends of the evaporator provision is also made for an inlet duct and for an outlet duct for the coolant fluid.

    Abstract: A homogenizer device for the production of whipped cream comprises an external sleeve (10) and an internal sleeve (11) between which is formed a labyrinth (13) in which the air-emulsified whipped cream is fed under pressure through an upstream conduit (25) and then delivered in a homogenized condition in a downstream position through a dispensing spout (22). The internal sleeve (11) features an axial bore (16) within which slides a stem (14) which is provided at its upstream extremity with an actuating piston (15) which also controls an aperture (24) providing communication between the delivery conduit (25) and the labyrinth (13). At its downstream extremity, the stem (14) acts on a separate valve (18) which is under tension from a spring (19) and which controls the outlet of the axial bore (16) communicating between the labyrinth (13) and the dispensing spout (22).
