    Abstract: High erucic cruciferae oils are interesterified with C.sub.16 or higher fatty acids or derivatives thereof. The use of a 1,3-selective lipase leads to the introduction of the fatty acid groups in the 1,3-positions. The liberated erucic acid (derivative) can be hydrogenated; the behenyl acid (or derivative) thus formed can be recirculated to provide at least 50% of the behenyl acid (derivative) needed in the process. The products obtainable by these processes, display good anti-blooming properties.

    Abstract: Substitute milk fat especially as a replacement fat in infant formulations comprises 2-saturated glycerides especially 2-palmitic acid glycerides, in which the 1, 3 positions are randomly occupied substantially by different shorter chain and/or unsaturated fatty acids. These glycerides are prepared by selective rearrangement of glycerides using 1, 3-regiospecific lipase enzymes as rearrangement catalysts, preferably in acidolysis rearrangement using unsaturated acid or alkyl ester thereof.

    Abstract: Hard fat replacers, particularly for cocoa-butter, are provided comprising mixtures of mid-fraction from palm oil and at least 85% pure SOS, POS or SOS/POS. SOS is 1,3-distearyl-2-oleyl glycerol and POS is 1-palmityl-2-oleyl-3-stearyl glycerol. Using these hard fat replacers hardened milk chocolate and plain chocolate suitable for tropical use can be prepared as well as excellent normal plain and milk chocolates.

The hard fat lies within an area defined in FIG. 18, 19 or 20; in the absence of the SOS/POS-fat, the hard fat lies outside the area. Particular mixtures are also claimed for use as hard fats. Palm mid-fraction is a preferred natural, high POP/POS/SOS-fat.
