    Abstract: A method is provided for storing a cooked food in a flexible-walled container having an opening. The method includes placing a quantity of food in a flexible-walled container and submerging at least a portion of the container in a liquid with the opening being located so that liquid does not enter the opening. At least the lower portion of the container is maintained in the liquid and the food is maintained in the container below the surface of the liquid. The liquid collapses the container to seal the container. The temperature of the liquid may be maintained at a non-ambient temperature to heat or cool the food as it is stored. The method may also include storing the food adjacent a work surface, or at a remote main vat and transporting the rack to the work surface at which a serving that includes the food is prepared.

    Abstract: Improved cooking devices and methods of achieving good adherence contact between a low-friction, non-stick release sheet material and a heated food-supporting platen or cooking surface are provided. The adherence of the release sheet to the lower platen is sufficiently good to permit removal of cooked items such as hamburger patties with a spatula without significantly adversely disturbing the release sheet. In addition, good heat transfer is achieved to permit good sear (good carmelization and good browning) on the bottom surface of foods, including hamburger patties. In addition, inventive cooking utensils and methods are provided that incorporate or use release sheets in the utensils themselves, so that the benefits of a release sheet on the food-supporting platen or cooking surface are achieved.

    Abstract: Improved cooking devices and methods of achieving intimate heat transfer contact between a low-friction, non-stick release sheet material and a heated platen are provided. In particular, improved intimate heat transfer contact may be achieved by providing a very thin release sheet, providing a layer of heat transfer enhancing material forming an intimate heat transfer contact interface between the release sheet and the platen, and/or providing a release sheet that is gas-permeable and liquid-impermeable. A dynamic tensioning system is also provided for mounting a release sheet to a heated platen and maintaining even, bidirectional tension on the release sheet to keep it taut against the platen. Illustrated embodiments of the invention include a clamshell grill and conveyorized contact toaster.

    Abstract: A tray for vibratory conveying of food articles from a hopper is provided. The tray includes a tray body, food inlet portion, and a food outlet portion. An upwardly extending dividing member divides the tray into at least two food inlet conveyor passageways, the inlet conveyor passageways merging into a single food passageway that extends to the food outlet portion. The single food passageway may have an initially wide portion and subsequently narrow to a narrow portion as it approaches a discharge end. This arrangement helps to declump food items, preferably causing food items the size of chicken nuggets to be conveyed in a single-file arrangement along the single food passageway. The single food passageway is preferably non-linear, and may, for example, have a zigzag or serpentine configuration to promote accurate dispensing of food items.

    Abstract: A device and method for erecting a collapsed individual portion-sized French fry type container of the type having opposed sidewalls connected by a collapsible container bottom are provided. The device includes a retrieving and container grasping device, which may be a suction cup, for grasping one of the opposed sidewalls, a restraining member for restraining the other opposed sidewall, and means for causing movement of the grasping device away from the restraining member to separate the sidewalls. The grasping device may be mounted to carriages for moving it in two dimensions. An inclined ramp may also be included to urge up the container bottom as it is dragged up the ramp, thus urging the container to an erected position. Additionally, a stream of compressed air may be injected into the open end of the container and towards the container bottom by an appropriate injecting means for assisting in the erecting.

    Abstract: A device and method for automated frying of foods is provided. The device includes a fry vat for containing and heating cooking oil, at least one circular fry wheel with a plurality of compartments having openings towards the perimeter of the fry wheel, a drive mechanism for rotating the fry wheel, and an overflow passageway located above a normal operating level of cooking oil in the fry vat. The fry wheel rotates about a radial axis disposed above the normal operating level of the cooking oil. A control mechanism for causing the drive mechanism to rotate the fry wheel back and forth to simulate shaking of a fry basket may be included. A food inlet is preferably included adjacent the overflow passageway or a foam deck including the overflow passageway. In a preferred method, the fry wheel submerges food in cooking oil and shakes the submerged food in a fry basket.

    Abstract: An automated method of packaging cooked French fries in an individual portion-sized French fry container is provided, wherein the cooked French fries are mechanically delivered to a holding bin, an empty French fry container is mechanically scooped into the cooked French fries to fill the container, and the filled French fry container is mechanically deposited at a drop-off location. The cooked French fries may be received on an inlet chute, the inlet chute optionally vibrated to assist gravity in causing the French fries to travel into the holding bin. Seasoning may be applied to the French fries while the French fries are on the inlet chute, optionally restrained by one or more gates. After filling, the filled container may be mechanically shaken. Additionally, the empty French fry containers may be mechanically selected from a plurality of different-sized collapsed containers, mechanically obtained, and mechanically erected prior to scooping.

    Abstract: A device and method are provided for dispensing a quantity of food to be cooked. The device includes a freezer, a storage container located in the freezer, means located in the freezer for dispensing a predetermined quantity of food from the storage container into a secondary container, and means for dispensing the quantity of food from the secondary container to a location outside the freezer. The means for dispensing a predetermined quantity of food may be, for example, a magazine with dual spiral flights for dispensing food items one at a time, or a vibratory conveyor cooperating with a device for determining a quantity of food in the secondary conveyor and means for terminating the dispensing when a predetermined quantity of food is sensed. The secondary container may have an opening in its bottom and be movable laterally to align its opening with an opening in the freezer.
