    Abstract: A system for handling of cheese in the green state particularly directed for handling natural cheese types such as cheddar and colby in a manner so that they can be conveniently sub-divided and individually packaged, on the same day of manufacturing, into a variety of finished consumer and cheese market sized portions. The system includes the handling of green cheese immediately as it is formed through the processes of batch or continuous cheese making equipment and cheese towers to provide, preferably, 40 to 45 or other selected pound blocks of green cheese. The cheese blocks are immediately handled after forming to eliminate the normally utilized bulk block aging or curing systems. The green cheese blocks are selectively handled and may be placed into temporary bulk block pouches and packaged for future handling or are directed to trimming and cutting devices which will trim and cut the blocks into the consumer, market size units.

    Abstract: Blocks of natural cheese (11) are packed in layers in an open-ended upright container (17), for maturing by depositing each layer of cheese blocks (11) on an elevator (18) within the container (17) and lowering the elevator (18) as successive layers of cheese blocks (11) are fed into the top of container (17). The cheese blocks (11) for each layer are assembled on a platform (52) which is moved into a position above the container (17) and the cheese blocks (11) slid off the platform (52) to drop into the container (17). The cheese blocks (11) are freshly made and at a temperature between 24.degree. 32.degree. C. so that the cheese blocks (11) fuse together in the container (17) to form a homogeneous mass of cheese in the container (17).

    Abstract: A machine for vacuum-sealing a block of cheese in a tube of heat-sealable plastics material forming the lining of a cheese box mounted on a wheeled dolly, the tubular lining having an open end which projects out of the cheese box. The machine comprises a frame having an upright wall fitted with transverse rails for supporting the dolly carrying the cheese box, a hollow casing open at one end and mounted on the frame for movement between an open position permitting movement of the dolly and cheese box onto the rails and a closed position in which the casing cooperates with the wall to form a chamber enclosing the rails, dolly and cheese box, and means for evacuating air from the chamber. The machine also has gripper mechanism for holding taut the open end of the lining tube, and welding mechanism for sealing the open end of the tube when the chamber is evacuated, the gripper and welding mechanisms being enclosed within the chamber.

    Abstract: Cheese curd is fed into the top of a hollow perforated column in a tower at a sub-atmospheric pressure so as to form in the column a pillar of curd supported on a guillotine blade which closes off an opening in the bottom of the tower. A former unit below the tower has an upright open-ended cylinder sealed against the bottom of the tower, and an elevator within the cylinder. The guillotine blade is withdrawn, the pillar of curd lowered into the cylinder by the elevator, and the guillotine blade returned to its closed position so as to cut off a block of curd from the bottom end of the pillar of curd. The elevator is then forced upwards to compress the block of curd within the cylinder. The former unit is subsequently lowered, pivoted into a horizontal position, and the elevator driven along the cylinder to eject the block of curd.

    Abstract: A method and apparatus for processing and packaging cheese in which cheese curd which has been milled and salted is fed into four columns mounted on an upright tubular trunk fitted at the lower end with a guillotine blade movable between a closed position in which it closes the bottom of the trunk and an open position in which the blade is wholly clear of the trunk. The columns are maintained at a sub-atmospheric pressure so that air in the curd is flashed off immediately the curd enters the columns. The curd in the columns flows into the trunk and merges with the curd from the other columns to form a pillar of curd supported on the guillotine blade. The walls of the columns are perforated for drainage of whey pressed out from the curd by the weight of superimposed curd. An elevator below the trunk lowers the pillar of curd when the guillotine blade is withdrawn, the blade being subsequently returned to cut off a block of cheese from the lower end of the pillar.

    Abstract: A conveyor comprises two endless chains mounted on sprockets secured on two transverse shafts, and a plurality of transverse slats mounted on and extending between the chains. The chains are fitted with wheels which roll along rails for supporting the chains and slats. Each slat comprises a main plate made of thin sheet metal and having its longitudinal margins turned down through an angle greater than 90.degree., a rod having the shape of a shallow V which extends along the underside of the plate and has its ends secured to the main plate adjacent the ends of the main plate, and a central upright plate which supports the center of the main plate on the center of the rod.

    Abstract: A cheesemaking installation comprising means for forming a mat of curd from a slurry of curd and whey, a plurality of endless conveyors for continuously moving the mat of curd in succession through a drying and de-wheying section, a fusing section, a stretching and cheddaring section, a milling section having means for cutting the curd into separate particles or pieces, a salting section having means for applying salt to the curd, and a mellowing section permitting absorption of the salt into the curd, and means for agitating the curd in the de-wheying and salting sections. Additional agitators are selectively operable when the installation is used for production of granular curd, and water sprays are provided for use when producing washed granular curd. The installation is completely enclosed to enable the temperature to be controlled and prevent air-borne contamination.
