    Abstract: The invention relates to an apparatus and process for controlling automatic baking in a retail store In on embodiment, the baking apparatus includes an oven, an infeed device for feeding in dough slabs and a transport mechanism for transporting the dough slabs from the infeed device through the interior of the oven to a delivery station at which the ready-baked goods are made available to customers. Further, the apparatus includes a data processing unit that: records the quantity of baked goods made available, receives by way of a data network from the retail store's point-of-sale system the number of baked goods sold, and prompts the baking apparatus to start up the baking process on the basis of a comparison of those two values. In one aspect, the present invention provides for control of the level for the delivery station together with devices present in the retail store.
