    Abstract: The invention relates to an apparatus for filleting beheaded and gutted fish, comprising a cutting unit for filleting the fish, wherein the cutting unit has at least one pair of circular blades, an endlessly rotating transport conveyor having at least one saddle-shaped supporting body for receiving the fish and conveying them through the cutting unit tail first, wherein each supporting body has a supporting edge for making a form-locking connection with the centre bone of the fish to be processed, and a device for centring the centre bone in relation to the supporting body, which is distinguished in that a means for lifting the centre bone of the fish off the supporting edge of the supporting body is provided, which is arranged in the region of the device for centring the centre bone. Furthermore, the invention relates to a corresponding method.

The separating device includes a rotating circular knife to detach a fish fillet from the flank bones and the counter support includes a fixed element and is associated with the separating device. The counter support and separating device are movable about two axes, the fixed element being movable relative to the circular knife and independently thereof.

    Abstract: The invention concerns an apparatus for removing a surface layer from fish fillets. To permit the apparatus to operate with high precision and optimal yield for a large variety of fish species it comprises an entrainer roller which serves as a conveying surface and a pressing shoe having a pressing surface spaced from the outer surface of the entrainer roller by a gap. The pressing shoe comprises a guide for an endless belt knife. Pressing means in the form of a plurality of driven pressing rollers are arranged in an area directly above the cutting edge of the knife to act on the knife as the fish fillets are processed. The pressing rollers are mounted to rotate with two degrees of freedom thus permiting them to exert pressure with maximum surface possible and reliably flatten the fish prior to its arrival at the belt knife.

    Abstract: In an apparatus for dividing fish fillets of the type as shwon e.g. in German Patent 36 23 002 there is used a sorting device, the aim of which is to sort automatically fillet pieces gained under the aspect of predetermined geometric or volumetric properties. To this end, a connecting conveyor is arranged downstream of a belt conveyor of the dividing device leaving a space therewith, in which space is installed a set of flap elements which can be swivelled about a common axis by single activation. In their activated position these function as a transfer chute between the said conveyors, whereas, in their rest position, there remains a discharge shaft downstream of the belt conveyor of the dividing device. The selection of the flap elements to be activated occurs in accordance with a predetermined programme, which makes said selection in accordance with the respective cutting position of the cutting elements of the dividing device and, if necessary, controls these elements with respect to the time parameters.
