  • Patent number: 6090430
Abstract: There are provided a method of producing a pressurized gas-entrapping candy and a pressurized gas-entrapping apparatus to be used for the method. According to the method, the pressurized gas-entrapping candy is produced by preparing a hard candy with a conventional method, crushing the hard candy and sieving to obtain candy particles, attaching a pipe with fine holes in its peripheral wall to a cylindrical vessel through an opening formed in a lid of the cylindrical vessel, filling the candy particles in a space between the cylindrical vessel and the pipe, loading the cylindrical vessel in a long and cylindrical pressure-resistant vessel, feeding heating steam and then cooling water to a jacket portion of the pressure-resistant vessel, while maintaining pressurized state in the pressure-resistant vessel, to carry out heating and cooling treatments of the candy particles in the cylindrical vessel, and then releasing the pressurized state of the pressure-resistant vessel.

  • Patent number: 5496165
Abstract: Disclosed is a shaping cutter including upper and lower blades (4) and (3) fastened at one end so as to open in the shape of the letter X and cut when they close. The upper blade has an operating lever (6) extending from the end at which the upper and lower blades are fastened. An endless linear conveyor (2) has the lower blades fixed thereon, and a guide rod (7) extends parallel to the conveyor. When the conveyor moves, the operating levers of the upper blades slide along the guide rod to cause the upper blades to move from the opening position to the closing position relative to the lower blades, thereby cutting into pieces an elongated edible dough running at the same speed in the same direction as the endless linear conveyor runs. The elongated edible dough can be cut into pieces of a desired shape and size in succession. Advantageously a variety of funny-shaped pieces of confectionery or food can be provided by selecting appropriate blade shapes.

  • Patent number: 5370888
Abstract: A process for the manufacture of chocolate confectionery by entrapping a fatty cream with fine gas bubbles. The confectionery is manufactured by preparing a shell chocolate with open end in a mold, feeding under pressure a fine gas bubble entrapping fatty cream base into the shell chocolate through the opening to fill the shell, scraping off excessively charged fatty cream, solidifying the fatty cream in the shell, pouring a chocolate base on the solidified fatty cream to close the opening of the shell chocolate, scraping off excessively charged chocolate base, solidifying the chocolate base, and demolding the product. A stencil plate can be used, when the gas bubble entrapping fatty cream is charged into the shell of shell chocolate.
