    Abstract: A machine including a drum having a closed rear extremity and an open front extremity for loading/unloading meat pieces, the drum bearing on rollers of a support structure and being coupled to a structure for its rotation in both directions. The structure being hinged to a bench and associated to oblique fluidodynamic cylinders, for rocking purposes. The drum has internal vanes intended to carry away and tumble the meat. The bench is a frame resting on the ground, and the structure has at its front part hinges connected to the bench, horizontally aligned and close to the ground. At its rear part the structure is connected to a plate carrying a device for the rotation and guiding of the drum. Elastic elements are aligned along a horizontal axis, secant to the rotation axis, behind the closed end of the drum.

    Abstract: The invention relates to a method and device for stuffing meat materials into sausages closed by stapling. The processed meat materials, before their introduction into an endless sleeve (4) having a first closed extremety and further narrowing of the stuffed material at regular intervals by means of spaced staples in order to produce a line of stuffed elements, are previously subjected to a cutting step at regular intervals of the continuous flow of meat material to be stuffed into the sleeve (4), making said cuts coincide with posterior zones of narrowing. The device for implementing the process comprises a stuffing zone (3) with continuous flow of meat materials, from a stuffing machine (1) through an outlet tube (2) introduced into the sleeve (4), having a first closed extremity, and includes between said outlet tube (2) of the stuffing machine (1) and said stuffing zone (3), a guillotine assembly (8) intended to cut transversally the meat material.

Piston heads (5) of the cylinders (2) are inside the container (1), the first portion (B) of the stroke (A) of the cylinder (2) taking place in a narrow area (1a) of the container (1) wherein the piston heads (5) stir and impulse the food material and a second portion (C) of the stroke (A) takes place inside stuffing-dosing chambers (4) in the lower terminal portion of the container (1) of which the internal walls match the piston heads (5) and of which the stuffing-dosing chambers (4) are adjacent to the compaction-stuffing cavities.

    Abstract: An improved automatic machine for sterilization and aseptic packing of meat products such as a piece of ham, shoulder meat or the like. The machine operates in a continuous cycle and includes first, second and third stations. The first station sterilizes an outer surface of a meat piece which is fed, after pasteurization, in a stripped condition into the first station. The first station has a tightly sealable chamber with a grid deck for supporting and then releasing the meat piece. The first station further includes a mechanism for tightly closing the chamber after introduction of the meat piece; a mechanism for opening the chamber after sterilization, and a heating mechanism for heating the inside of the chamber. The second station achieves packing of the meat piece after sterilization and includes a mechanism for removing the meat piece from the first station and for transferring the meat piece onto the second station.

    Abstract: A needle for the spray injection of brine into meat pieces. It comprises a tubular body (1) provided with an axial duct (2) with radial holes (3) being distributed along the tubular body of the needle and piercing its wall right through, having a diameter which is apt to assure the spraying of the brine under pressure. A holding end portion (4) is connected to an end of the body (1) and provided with a fastening zone (5), and a pointed tip (6) is connected to the other end of said body (1). An upper wall of the tip (6) connected to the lower end of the axial duct (2), comprises a plane (7) in the shape of an inclined trough or bowl whose profile shows a width which decreases from top to bottom, in such a way that its lower profile or bottom ends in a flushing connection with the lower part of the inner wall of the radial hole (3) which is closest to the needle pointed tip (6).
