  • Publication number: 20160053943
Abstract: A method for supplying subcooled cryogenic liquid to at least one station (P, P1, P2 . . . ) carrying out machining operations, from a storage tank (10), said tank containing, under a storage pressure higher than atmospheric pressure, the cryogenic fluid in the liquid phase at the bottom of the tank and in the gaseous phase at the top of the tank, said tank being suitable for supplying said station (P) with liquid drawn from the bottom of the tank (10), and for being provided with fluid from the outside, characterised in that it involves: providing at least one heat exchanger, submerged in at least one bath of said cryogenic liquid (20), controlling (3, 4) the level of the or each bath at a predefined level; passing the cryogenic liquid coming from the storage tank (10) through the or each heat exchanger before said liquid arrives at said machining station(s); regulating (1, 6, 12,13, 61, 62 . . .

  • Patent number: 8465784
Abstract: The invention related to a method and a device for thawing food products that comprises using at least one microwave radiation applicator in a chamber through which said products are passing, characterized in that before the insertion into the chamber or a first inlet area of the chamber, all the surfaces of the product are covered with a homogenous film of carbon dioxide snow in the form of electrostatically charged microparticles.

  • Patent number: 8404290
Abstract: The subject of the invention is a method for shaping at least one food product by cryoextrusion, the extruder being provided with a double-walled jacket surrounding the extrusion screw and through which jacket a coolant flows, this jacket consisting of a single module or several independent modules, the cryoextrusion being temperature-regulated on the basis of a curve, determined for said product to be cryoextruded, representing, plotted on the X-axis, the difference D between the actual temperature of the product and the desired temperature setting for the product at the exit and, plotted on the Y-axis, the setting to be applied for the gas temperature at the exit of the module or modules, the curve being split into three linear zones: an abrupt (steep-slope) zone, around a difference D close to 0, surrounded by two quasi-plateau zones.

  • Publication number: 20120255315
Abstract: The invention relates to a method for cooling materials, in particular food, in a cooling apparatus, the cooling being completely or partially carried out by contacting the materials with a cryogenic liquid. Said method is characterized in that the contacting is carried out by means of the injection of two cryogenic liquids, nitrogen and CO2. The liquid nitrogen and the liquid CO2 are injected either separately, into at least two injection points of the apparatus, or by mixing both cryogenic fluids at the injection point. The invention is of use if the apparatus being utilized is a mixing, batch mixing, or grinding chamber, with the injection being carried out into the body of the material in the bottom portion of the chamber.

  • Publication number: 20100196560
Abstract: The invention relates to a method for shaping at least one food product by cryo-extrusion using an extruder that comprises at least one extrusion screw driven by a motor and a die at the outlet of said at least one extrusion screw, characterised in that it comprises measuring at different times ti and ti+1 the intensity I consumed by the motor, the rotation speed of said at least one extrusion screw being increased if the intensity difference ?I between ti and ti+1 is positive and higher than a predetermined value.
