    Abstract: Poultry carcasses are conveyed on saddles with their breastbone plate facing downwards to a scraping device having left and right scraping elements arranged adjacent to each other to simulate the contour of the approaching poultry carcass. The scraping elements are spaced apart by a signal from the control unit in relation to the individual width of the poultry carcass. Each scraping element has a sinew restraint that finds and restrains the tender sinew located in the region of the body joint, so that the scraping element can pass unhindered into the region between bone and meat and so obtain an optimum yield. A second scraping device, arranged essentially symmetrically to the direction of conveying, has left and right discs that are slidable by pivot levers to move on the corresponding part of the symmetrical wishbone in order to detach the meat connected to the wishbone.

    Abstract: A method and apparatus for processing flat fish is disclosed. The fish (5) are placed on a conveyor (1) and transported on a conveying surface (1.1) over an array of photosensing elements (3.4) which generate light absorbtion signals as the fish is advanced. These signals are sent to a computer, which determines the contour of the fish using information regarding the conveyor speed and computes cutting control signals using pre-programmed proportionality factors relating to the fish species. The cutting line control signals are sent to a cutting apparatus (4). As the advanced fish arrives at the cutting apparatus, two rotary knives (4.1) cut into the dorsal and ventral sides of the fish in response to the control signals to remove the dorsal fin together with a strip of fatty tissue (5.12) from one edge of the fish and the internal organs, the anal fin and the ventral strip of fatty tissue (5.11) from the other edge of the fish.

    Abstract: An installation for processing flatfish, in particular for severing the head, and, if necessary, the tail thereof, comprises a feeding device (1), means for aligning the fish and means for conveying the same in rest position on one of their sides through the operative area of processing tools. The installation can be characterized in that the conveying means (13) is provided with entrainers (14) which engage the fish at its flank remote of that lying on the support surface (16), and are controlled to turn about an axis which is perpendicular to said support surface (16). Each fish is taken over by the entrainer (14) with attention being paid to a detected measured value with respect to its size such that the point of engagement of the entrainer is uniform independent of the size.

    Abstract: An apparatus for severing the fillets from fish rumps comprises cutting tools each composed of pairs of circular knives for cutting free the belly spokes, the back spokes and the ribs or vertebral appendages, respectively. The last mentioned cutting tool has a double function which consists in that each circular knife of this tool is associated with a guiding element, which, in its rest position, lies against the inner face of the circular knife with its guiding face. The guiding edges of the guiding elements support the vertebrae of the vertebral column and can be displaced within the cutting planes of the circular knives and can be controlled, in their displaced position, into a position in which a gap for the passage of the ribs or the vertebral appendages is opened between the inner face of the circular knives and the guiding face. The displacement of the guiding elements occurs by the effect of transporting disks, which support the vertebrae of the vertebral column on the opposing side.

    Abstract: The invention concerns a feeding aid helping the manual feeding of fish processing machines, especially those for the processing of flat fish. The aid is suitable to be used on machines which have a vertical feeding shaft receiving the flat fish respectively their rumps and comprises a cover arranged above the feeding shaft and to be folded upwards, on which cover guiding plates extending into the feeding shaft are arranged. These guiding plates oppose each other V-shaped and are pivotal against the force of a spring about their longitudinal edges facing each other, the displacement occurring by each fish arriving in the feeding shaft and thereby effecting an adaptation of the V-shaped angle to the cross sectional shape of the fish.
