    Abstract: This invention provides a modified egg with enhanced health and nutritive values for human consumption. The modified egg contains less cholesterol and saturated fat, and contains a beneficial content of omega-3 unsaturated fatty acid. In another embodiment this invention provides a poultry feed for production of modified eggs in accordance with the present invention. The poultry feed ingredients include a cholesterol-lowering agent, and omega-3 unsaturated fatty acid.

In another embodiment, this invention provides a ruminant feedstock supplement for controlled-release of non-protein nitrogen which comprises urea particles encapsulated with a rumen-degradable polymeric coating.
