    Abstract: A low-cost process for preserving fish for periods up to five weeks without deterioration or loss of quality comprises the steps of subjecting freshly caught fish to one or more antimicrobial treatments, supercooling the treated fish in an ice/salt mixture to a temperature of from about -2.degree. C. to -5.degree. C. and storing the supercooled fish in a non-frozen state at temperatures in the range of about 0.degree. C. to about -5.degree. C.

    Abstract: This invention relates to three enzymes, their isolation from the viscera of bivalves, e.g. the surf clam or cherrystone clam, their characterization and uses. The first two are carboxyl proteinases having molecular weights of about 77,200 and about 36,700 and display activity similar to mammalian D-cathepins. The third is a thiol proteinase having a molecular weight of about 17,400 and displays activity similar to mammalian B-cathepins. In addition to attaching various substrates, the enzymes coagulate cheese milk and tenderize meat.

    Abstract: The flavor stability of milk is enhanced by heating fresh milk at a temperature and for a time sufficient to significantly lower its bacterial count. Further the yields in a convention cottage cheese or quarg making process are enhanced when milk is similarly heat treated and then aged prior to use in the cheese making process.

    Abstract: A cleaning apparatus for automatic milking machines of the Clean-In-Place (CIP) type in which pre-rinse liquid and reused cleaning solutions are maintained at a temperature within 50 .degree. F. - 120.degree. F. A vacuum pump and a liquid pump along with the operation of various valves enable the passage of the pre-rinse liquid and cleaning solution through the milking machine. An insulated storage receptacle with a heater maintains recovered cleaning solution at the desired temperature for reuse.
