  • Publication number: 20090104318
Abstract: A process for producing a food product with multicolored decorative pattern, including introducing two or more colored fluid food materials in a single mold so as to attain formation of various patterns/configurations. In the filling of two or more colored fluid food materials in the mold through injection, neighboring materials after the injection of the two or more colored fluid food materials collide with and compete with each other so as to develop various linear borderlines. Thus, there is provided a process for producing a food with multicolored pattern.

  • Publication number: 20070237869
Abstract: A decorative confectionery product is provided by forming an aqueous edible coating layer 2 on the top an edible base material 1 having an oil-containing surface, and subsequent forming of an image 3 through printing on the coating layer 2. The edible base material may be chocolate, the coating layer 2 may be formed through silk screen printing, and printing may be ink-jet printing. By use of the present invention, clear images can be formed on the top surface of a confectionery product which contains an oil-containing edible base material, because aqueous edible ink is employed.

  • Patent number: 4480974
Abstract: A continuous and automatic process for molding chocolate blocks each having an ornamental relief pattern of one color and a body portion of different color carrying the relief pattern is provided. Also, there is provided apparatus for continuously and automatically producing such ornamental chocolate blocks. A first chocolate material for forming the ornamental relief pattern is cast into a first mold and scraped to scrape off the excess chocolate material. A second mold is then placed on the first mold and a second chocolate material for forming the body portion is cast into through-openings of the second mold. The second chocolate material inevitably oozing into the interface between the first and second molds adheres only onto a rough surface portion formed around and surrounding the through-openings of the second mold without the second chocolate material adhering onto the first mold. It is thus not necessary to remove the oozing chocolate material from the first mold.

  • Patent number: 4421773
Abstract: According to the invention, there is provided a process for molding chocolate to make a molded product including a thin ornamental relief pattern made of a first chocolate material of one color and a body portion carrying the thin ornamental relief pattern and made of a second chocolate material of different color. The body portion has a hollow cavity internally thereof. The first and second chocolate materials contain 30 to 40% by weight of the same kind of base oils and fats. The process comprises the steps of casting the first chocolate material into a first mold to form the thin ornamental relief pattern, pouring into a second mold the second chocolate material to form the body portion, combining the first and second molds to form a closed mold and rotating the closed mold while vibrating to thereby form a hollow cavity in the body portion.

The first and second chocolate materials contain 30 to 40 wt. % of base oils and fats and at least 60 wt. % of the oils and fats in one material is the same as those in the other material. The first material in a fluidized state is cast into an engraved ornamental pattern formed on a mold, followed by scraping the face of the mold and rapidly cooling the surface of the first chocolate material to 18.degree. to 22.degree. C. Then the second chocolate material in a fluidized state is cast on the mold to cover the first chocolate to thereby firmly bond or adhere the two materials.
