    Abstract: The first object of the present invention is to provide a process for producing rice flour, which enables to process both unpolished and polished rice grains into rice flour by a single procedure on an industrial scale and inexpensively. The second object of the present invention is to provide rice flour produced by the process and uses thereof for producing bakery products and noodles.
