Patent number: 9173916Abstract: Muscadine grape extracts are disclosed that have antioxidant properties. The extracts are a mixture of extracts from bronze and purple muscadine grapes that unexpectedly increase the solubility of ellagic acid in the mixture. Solvent extracts are obtained in some examples by water extracting the pomaces of the grapes from which the juice has substantially been removed. Further surprising increases in ellagic acid solubility can also be obtained by adding an additional source of anthocyanins to the extract, for example by including in the composition an extract of whole purple muscadine grapes from which substantial amounts of the juice have not been removed.
