    Abstract: According to an embodiment, there is provided herein a method of using electrolyzed oxidizing water ice (EO ice) as a Cleaning-In-Place (CIP) method that reduces antimicrobial contamination. One embodiment is utilized in connection with beef grinders. In one embodiment, EO ice was prepared by freezing 200 mg/L free chlorine-containing EO water at 20° C. overnight. The EO ice and, optionally, EO ice/water mixture was then ground within an operating meat grinder. The EO ice treatment in combination with EO water has the potential to reduce cross-contamination and could serve as an easy to apply antimicrobial intervention to improve overall safety of ground beef.

    Abstract: Feed water comprising an aqueous salt solution is supplied to an anode chamber and to a cathode chamber. The feed water is cathodically electrolyzed in the cathode chamber to produce alkaline electrolyzed water (catholyte) and is anodically electrolyzed in the anode chamber to produce electrolyzed water (anolyte) whose pH is modified. A portion of alkaline catholyte from the cathode chamber is recycled back to the feed water during continuous electrolysis to provide a blend of feed water and alkaline catholyte to the anode chamber to control pH of the anodically electrolyzed water therein to provide more stable bactericidal activity thereof over time.

    Abstract: A firmness measuring device for non-destructive testing of objects with rough surfaces (such as fruit) is disclosed. The device comprises the following components: a means to generate an impulsive jet of a fluid (such as air) aimed at the surface of the object under test; a laser to generate a beam of coherent light aimed at the area on the surface of the object under test impacted by the fluid jet; a detector to sense the light reflected off of the surface of the object from the laser beam; an analyzer to determine the amount of deformation of the surface caused by the fluid jet based on the input to the detector; and a controller to coordinate the release of the impulsive jet with the analyzer.
