    Abstract: The present disclosure discloses the dual-functional bean-derived polypeptides and a preparation method therefor, and belongs to the technical field of functional polypeptides. The method includes extracting a bean source protein isolate from beans by an alkali-solution and acid-isolation method first, then subjecting the bean source protein isolate to infrared heat treatment, and finally performing enzymolysis with a protease to obtain the bean-derived polypeptides. The bean-derived polypeptides have dual functions of an antihypertensive activity and an antioxidant activity at the same time.

    Abstract: The present disclosure discloses a method for accurately separating and identifying an oxidized triglyceride in frying oil, and belongs to the technical field of detection. In the present disclosure, the structure of the oxidized triglyceride (ox-TG) in the frying oil is identified by mass spectrometry first. It is found that after frying is conducted for 24 h, the ox-TG mainly includes epoxy ox-TG, hydroxyl ox-TG, and aldehyde ox-TG. Thus, the three types of ox-TG are selected as a template molecule to synthesize a surface molecularly imprinted polymer (SMIPs). Then, a polymer completely matched with the ox-TG template molecule in action site and spatial configuration is synthesized, and the specific ox-TG can be separated by using the SMIPs. According to the present disclosure, OXTG-SMIPs prepared by a molecular imprinting technology has good specificity, stability, and affinity, and accurate separation of the ox-TG in the frying oil can be achieved.

    Abstract: The disclosure discloses a method for quickly and accurately analyzing polyphenol content in rapeseed oil, and belongs to the field of analysis of natural compounds. The separation method of the disclosure uses acetonitrile-water as an extractant to extract polyphenols from the rapeseed oil, and cooperates with a C18 adsorbent for purification, and then performs separation and purification. Compared with the traditional liquid-liquid extraction and solid-phase extraction, the method has an average recovery rate of polyphenols in the rapeseed oil of 81.31% to 102.95%, and RSDs of 0.86% to 8.03%, and has higher accuracy and precision. The method of the disclosure not only uses less organic reagents and causes less environmental pollution, but also reduces matrix interference and improves purification efficiency through optimization of the adsorbent.

    Abstract: The present disclosure discloses an aquatic-plant protein combined restructured meat and a preparation method thereof, and belongs to the technical field of processing of foods. According to the present disclosure, a protein combined restructuring processing technology can be summarized as including pretreatment of an aquatic-plant protein, combined restructuring, high-temperature qualitative treatment, and integrated forming. The whole process is green, safe, and environmentally friendly. The protein combined restructured meat prepared contains two proteins including an animal protein and a plant protein, and has a protein content of greater than 20%. While the demands for nutritional dietary proteins are met, the chewability is greater than 1,500 g·mm, and the viscoelasticity is excellent. The meat can be processed in various shapes according to needs, directly heated for eating, or processed into a prepared food, a semi-finished product and the like, so that the product has a large application space.

Alternatively, Amano lipase M is used as a catalyst to efficiently catalyze the reaction of an amino acid containing a plurality of amino groups with a fatty acid to prepare a Gemini amino acid. The method of the disclosure does not need to undergo protection and deprotection of the amino acid, and does not involve commonly used fatty acid chlorides. Compared with the traditional chemical synthesis methods, the disclosure has the advantages of greenness, safety, high selectivity, high yield, etc., and has very important potential application value.
