Patent number: 5656315Abstract: A method for impregnating porous material with a liquid flavoring. The porous material comprises embossed sheets or disks of porous absorbent material, each of which is dispensed automatically onto a conveyor. Each individual disk is squirted automatically with a selected amount of liquid flavoring and then immediately packaged automatically. The selected amount of flavoring is less than the amount required to supersaturate the disk. Thus, by a passive capillary action, or "wicking" effect, dispersal of the flavoring liquid throughout the disk continues during the packaging step. This method reduces the amount of flavoring which is wasted in conventional impregnation methods. Further, the use of the capillary action to complete the saturation process allows the packaging to be commenced prior to completion of the saturation process and thereby substantially increases the speed with which the process can be completed.Type: GrantFiled: October 13, 1994Date of Patent: August 12, 1997Assignee: Advanced Food Technologies, Inc.Inventors: David C. Patent number: 4826695Abstract: A beverage infusion device for preparing a beverage such as coffee includes a gas-liquid chamber permeable to air and water which contains an infusible, insoluble dry beverage substance containing edible, soluble food solids, such as coffee particles, and a carbon dioxide source which releases carbon dioxide when immersed in liquid, such as water. When the infusion device is immersed in water, the carbon dioxide source, preferably situated beneath the coffee particles, releases carbon dioxide. The carbon dioxide bubbles up through the coffee particles, momentarily suspending and agitating the coffee particles. Maximum contact between water and coffee particles is achieved and the edible, soluble food solids are quickly extracted from the coffee particles to form a hot beverage. Also disclosed is a beverage infusion device including a percolator within a gas-liquid chamber permeable to air and water containing an indusible, insoluble dry beverage substance such as coffee particles.Type: GrantFiled: September 16, 1988Date of Patent: May 2, 1989Inventor: Joseph Tanner

Patent number: 4626435Abstract: A coffee serving contains a composition of a combination of a preselected amount of a coffee bean selection in flaked or ground coffee particle size and a preselected amount of a fruit acid-sodium bi-carbonate foamer composition, intimately mixed together in a water porous film serving unit bag. The ground coffee composition is disposed and secured in a serving unit bag, and is brewed in a preselected volume of boiling water for a preselected time period. When the unit bag of coffee combination is initially disposed in the boiling water, the unit bag floats, due to the carbon dioxide gas formed and evolving in the wetted bag, the gas agitating the grounds. As the carbon dioxide gas finally disperses through the porous film wet bag, the bag sinks to the bottom of the container of hot coffee solution. The slightly acidified or neutral pH brewed coffee solution is now ready to drink.Type: GrantFiled: November 18, 1985Date of Patent: December 2, 1986Inventor: Mark E. Zimmerman

Patent number: 4528200Abstract: A composition and method for mineralizing and enhancing the flavor of brewed beverages such as coffee and tea is disclosed wherein a finely divided mineral, a coloring agent such as powdered caramel, and a particulate beverage base such as ground coffee are combined to form an admixture. The admixture is placed on a filter and hot water is added. A portion of the finely divided mineral is dissolved in the hot water and passes through the filter along with the water soluble beverage ingredients. A small amount of the mineral solids also pass through the filter into the brewed beverage. A major portion of the mineral solids are retained on the filter surface, thereby retarding the brewing process and enhancing the extraction of flavoring ingredients from the particulate beverage base. The minerals added during the brewing process approximate those formed in fresh spring water and enhance the flavor of the brewed beverage.Type: GrantFiled: April 15, 1983Date of Patent: July 9, 1985Assignee: Spring Water Brew InternationalInventor: Henry E. Coleman
