A food processing facility according to this invention reduces the likelihood that food pathogens will be able to enter the food processing facility, or spread should they be able to enter. The food processing facility is divided into a plurality of area, with different areas having different allowed actions that can be taken on the food product, different rules and/or procedures for persons who are allowed entry, and/or different levels of cleanliness. The food processing facility includes a plurality of separate rooms for processing the food product, each including separate food processing machines, air handling systems, drain systems and/or often-used supplies and tools. Different air pressures within different areas limit the possible movement of airborne food pathogens. Sanitizing stations are placed between various ones of the different areas.

Abstract: The invention describes a method and an apparatus removing a plurality of die-cut products from an operating area of a die-cutting apparatus having multiple dies. The die-cut products are simultaneously picked up at a pick-up point in the operating area. Then they are simultaneously moved to a delivery point outside the operating area. At the delivery point, the die-cut products are released simultaneously. The operations of picking up moving and releasing are carried out in such a manner that the die-cut products at the delivery point are situated at substantially at the same position with respect to one another as those which they adopt at the pick-up point.

Abstract: A slicing machine includes a tapered slicing gate for use in cutting products such as potatoes or the like into a plurality of slices each having a tapered thickness. The slicing machine generally corresponds to U.S. Pat. No. 3,521,688 and includes a rotary impeller for carrying the products by centrifugal force against an interior surface of a nonrotating cylindrical outer impeller housing, a portion of which defines an adjustable slicing gate forming a cutting slot of controlled thickness relative to a stationary slicing knife for cutting the products into the plurality of slices. A tapered ramp is formed or mounted at a downstream end of the slicing gate so that the cutting slot and the resultant slices have a tapered configuration. The tapered slices may be cut further into elongated strips, such as French fry potato strips, having a tapered lengthwise thickness.

Abstract: A food slicer comprising a base having a slanted chute, a cutting blade housing and a cutting blade extending into the chute. The chute comprises a first panel having a first wall and a second panel having a second wall. Food is placed into a top of the chute and forced to slide to a bottom of the chute by gravity to cut the food with the cutting blade. The first panel and the second panel define a cavity having a uniform cross section. The first panel is adjustably positioned relative to the second panel, whereby the first wall can be moved towards and away from the second wall, thereby altering the size of the cavity in the chute. The food slicer can be placed on a mobile cart and connected thereto to thereby allow easy transportation of the food slicer.

  • Publication number: 20030037645
Abstract: A food processing apparatus for conveying food items such as carrots and the like to a cutter comprises a conveyor having a plurality of pockets for receiving the food items. The conveyor moves in a conveyor direction to the cutter for topping, tailing, or cutting the food items. A stationary feed chute is disposed adjacent a side of the conveyor for transferring the food items to the conveyor. The apparatus is disposed at a compound angle measured from the horizontal plane such that the food items are transferred from the feed chute to the conveyor by gravity. Food items which are not received into the pockets of the conveyor are carried by their momentum of feed to fall off from the conveyor by gravity in a direction away from the cutter, and are collected for return to the feed chute. This decreases the amount of misfed food items from reaching the cutter and the amount of uncut or improperly cut food items at the output of the cutter.

  • Publication number: 20020117033
Abstract: In a method and apparatus for rotating loose laminations in a loose lamination die, a strip is fed through the die to a rotatable blanking chamber of a blanking station. There, a punch engages with a die ring to punch a lamination free from the strip. The rotatable blanking chamber is biased in an upwardly direction. When the punch is not engaging with the die ring, the rotatable chamber is in an upward position wherein a gap develops between laminations retained at a bottom of the rotatable chamber, and those laminations lying directly below the rotatable chamber. The rotatable chamber can then be rotated without damage to the laminations at the gap because of the presence of the gap. Thereafter, a succeeding lamination can be punched after the rotation has occurred. As the punch engages the strip on top of the die ring, the rotatable chamber is pushed downwardly so that the gap at the bottom of the rotatable chamber disappears.

Abstract: The present invention refers to a processing center for automatic food treatment without human intervention throughout the process. Various food products like vegetables or fruits are placed within the storage compartments of the apparatus and, depending on apriori preprogrammed parameters, are automatically cut in 3 dimensions. The desired 3D cut is obtained by the following cutting steps: 1. Slicing of the product. 2. Horizontal cutting of sliced product. 3. Vertical cutting of sliced product. Various possibilities are established by the above process so as to allow preparation of ready made salads with predetermined size of cut components like onion, cucumber, tomato, radish, banana, apple, orange, melon, etc. The apparatus is equipped with motion converting mechanisms, multimode control and with approppiate computerized control means.

  • Patent number: 6413566
Abstract: Simultaneous slicing and washing of relatively firm raw vegetable or fruit products is accomplished in a vat of water into which a slicer apparatus is positioned such that the slices are formed and discharge directly into the water. An inclined takeout conveyor serves to receive the slices and remove them from the water. A circulating water current and fluid jets urge the slices to disperse onto the conveyor. A spray of water or air blast removes residual vegetable matter from the slice surfaces before leaving the takeout conveyor for further processing. Slicing and washing a vegetable in a flume volute where the slices are dispersed onto a takeout conveyor is disclosed where the water medium is collected in a tub and recycled back to flow in the flume to a level that covers the slicer's operative parts. The apparatus may be used for simultaneous slicing and cooking of raw vegetables where hot cooking oil is maintained in the system and recycled for reheating.
