Abstract: The present invention is directed to a process of preparing thermally inhibited starches using the low molecular weight carbohydrates to improve the rate of inhibition. The resulting starch/low molecular weight carbohydrate blends have improved cold storage stability and may be used in a variety of products, particularly food products.
