    Abstract: Apparatus and process for treating pork bellies, the apparatus utilizing a frame carrying a belly supporting surface, a belly treating station made up of various belly engaging devices, a comb positionable in the treated belly flank side after the flank side has been engaged at the belly treating assembly, and an accumulation table carried by the frame for holding the treated and combed bellies after removal from the belly treating station. The belly treating assembly includes the flank side movable engaging stop, fatback side and lower side presses movable substantially horizontally to engage and compress the belly flank side, and a hold down assembly engaging the belly face and resisting its upward bowing or movement when the flank side is compressed. A belly hanging structure is positioned adjacent the accumulation table for receiving and supporting the combed bellies so that the bellies will lengthen and square during the smoking process.

    Abstract: A quick assembly/disassembly apparatus for splitting casing surfaces and peeling the cases from a string of sausages or the like which includes a trackway along which the sausage chain moves and driving discs that engage the casing covered chain of sausages and moves it along the trackway. A contour follower slitting blade is urged with a preselected amount of pressure against the skin casing of the moving chain of sausages and cuts the casing a precise amount to enable it to be thereafter loosened from the sausage by a stream of compressed air. A limiting pin prevents the slitting blade from displacement from the casing surface when the blade encounters a new casing to be split or other surface irregularities. Compressed air is directed against the split casings to urge the skin casings away from the sausages, and a vacuum assists an additional pair of driving discs to cooperatively engage the slit casings and move the casings to a remote location.

The leg portions are formed by slitting the tubular sleeve and joining the slit edges to provide a continuous longitudinal leg enclosing seam extending throughout the leg portions.     Abstract: A method, and product formed thereby, for cooking meat products to produce an aesthetic surface and retain the natural juices wherein a heat shrinkable packaging material having a simulated net retaining surface appearance is formed around the meat product, and the package and meat product are cooked in a hot water bath to heat shrink the packaging material and create a three dimensional net surface design on the cooked meat product. The heat shrinkable material is thereafter removed, the meat product surface retains the netted surface design, and the meat product retains natural meat product juices.
