    Abstract: The invention relates to a process and an apparatus for cooling high-viscosity sauces containing ingredients in the form of solid pieces. To develop a virtually continues process while preserving the ingredients in piece form as much as possible, according to the invention the following process steps are proposed:a) the sauce prepared at a temperature of 75.degree. to 120.degree. C. is pumped via a cooling system and is thereby cooled to a temperature of about 50.degree. to 55.degree. C.;b) the sauce pre-cooled in this way is pumped into a cooling tank under vacuum, which it passes through under the force of gravity, partly via enforced diversions and partly in free fall, the sauce being cooled by water evaporation to a temperature of about 3.degree. C. to 17.degree. C.

    Abstract: A processing machine is provided having a tool comprising at least two identical, diametrically opposite mixing fingers which revolve in the same horizontal plane. These mixing fingers have a round cross-section, are arranged very close above the bowl bottom and protrude with their free radially outer, slightly upwardly bent end into the bowl radius. Further, the mixing fingers are provided between the bowl bottom and bowl wall, and are adapted in contour outline approximately to the bowl radius. By using a round profile for the mixing fingers, both a pressure component against the bowl bottom and a raising component away from the bowl bottom are obtained. Also, due to the very small gap between the mixing fingers and the bowl bottom, an adequately high turbulence is generated so that material in this area is more fully mixed. Two mixing blades may also be provided above the mixing fingers and offset by 90.degree. in order to ensure proper mixing even of small amounts of material.

    Abstract: The invention relates to a machine for the processing of foodstuffs or for the preparation of liquid or pasty pharmaceutical and chemical products, with a bowl, through the bowl bottom of which there leads a motor shaft, protruding perpendicularly into the bowl, of a motor arranged underneath the bowl, and with a shaft seal sealing off the motor shaft vacuum-tightly from the bowl bottom.A cap-shaped seal support is pushed onto the free end of the motor shaft and resets underneath the fitted bowl on a shoulder of the motor shaft and engages at a clear distance labyrinth-like with a lower peripheral cap rim over a stationary housing ring enclosing the motor shaft. The seal support is pushed over and contacts an O-ring which lies in an annular groove of the motor shaft. In the upper section of the seal support, a V-ring is loosely inserted as a sealing ring, and encloses the shaft passage in the bowl bottom with an upper V-member.

    Abstract: The invention relates to a universal machine for the comminution, cutting, mixing, kneading, emulsifying, etc., of foods. The machine comprises a bowl with a circular cross section. The bowl according to the invention is supported on a supporting stand, and may be tipped around a tilting axle arranged horizontally under the bottom of the bowl. The bowl may be arrested in any desired tipped position. The machine further comprises a closable lid, a plurality of centered, rotating tools mounted on a tool shaft, and a motor for driving the tools disposed under the tilting axle and flanged onto the bottom of the bowl. Switching means for the motor are provided laterally on the machine. To simplify the handling of the machine and facilitate its cleaning, the switching means are housed in a control box which functions as a component of a stand for the bowl. The control box also contains the bearing for one end of the pivot axle and the electric lines to the motor.

    Abstract: The invention pertains to a food processing device having a mixing drum which is disposed on a support frame such that it slightly clears the floor. A horizontal tool shaft is eccentrically disposed in the drum. The mixing drum has a hinged front cover. A transport blade is disposed in the center of the front cover, and is embodied as an angled piece and provided with its own motor. To permit the device to be cleaned simply, quickly, and reliably, a special arrangement and sliding guide is provided for the outlet slide of the mixing drum. Easily-removable fasteners and seals are provided for the transport blade, the tools, and the tool shaft which bears the tools. The fasteners and seals facilitate rinsing out in the vicinity of a passage through the wall. Furthermore, a flap which closes off a feed opening on top can be provided. The flap comprises transparent material, has a contoured inner side and is removably fastened on a pivoting axis parallel to the axis of the drum.
