Abstract: A kettle process and product formulation protect large fragile fruit or vegetable pieces that have not been previously sweetened or sugar capped. The combination of a two-starch formulation and a controlled time and temperature kettle process are able to solve the problem of preparing a fruit or vegetable product with no sweetener added using a kettle process, providing large/whole pieces of fruit or vegetable with acceptable quality both out of the jar, can, pouch, packaging or the like and/or as a baking ingredient.

Abstract: An apparatus for grinding a mineral includes a head operable to be attached to a bottle. The head includes a radial slider for controlling the coarseness of the grind. The apparatus further includes an inner grinding element, an outer grinding element, a shaft, and a neck sleeve. The inner grinding element is in communication with the head. The outer grinding element is also in communication with the head, wherein the outer grinding element and the inner grinding element are operable to rotate relative to each other. The shaft extends through the inner grinding element and the outer grinding element. The shaft couples with the inner grinding element and has a blunt end. The shaft also extends through the neck sleeve, which acts as a spacer between the inner grinding element and the blunt end.

Abstract: A method for hydrating yeast comprises several steps. A package comprising a thermochromic ink and an indicator is provided. A liquid is provided. The temperature of the liquid is measured by placing the package in contact with the liquid. The liquid is heated or cooled until the thermochromic ink indicates the liquid is within the predetermined temperature range. The liquid and yeast are combined. The package comprises a pouch, a thermochromic ink, and an indicator. The pouch is formed from one or more films sealed together to create an internal space. The thermochromic ink and indicator are arranged relative to each other to indicate when the liquid is within a predetermined temperature range. The thermochromic ink changes color when the liquid is within the predetermined temperature range.

Abstract: An aqueous non-flammable release composition for use in food preparation comprising water; de-oiled, powdered lecithin; and less than about 10% oil. The de-oiled, powdered lecithin is water miscible which facilitates the use of less or no oil in a release composition, and allows the use of a non-flammable propellant. The non-flammable release composition may be applied to cooking utensils, such as baking and frying pans, and especially grills and the like, in order to prevent or inhibit food from sticking during cooking and to facilitate cleaning; which may be safely applied while a utensil, pan, or grill is hot; near an open flame or heating element; or while food is being cooked.

Abstract: A low trans fat oil blend is prepared with partially hydrogenated vegetable oil, palm kernel oil and palm oil. The oil blend comprises: at least about 50% partially hydrogenated vegetable oil having a trans fatty acid content from about 2% to about 8%, from about 20% to about 50% palm kernel oil, and from about 5% to about 20% palm oil. The low trans fat oil blend can be used to make a low trans fat margarine, or a spread.
