    Abstract: A commercial warewashing system has three sections, a pre-wash section, a power wash section and a final rinse section. The pre-wash section includes a sump. A perforated plate is placed in the pre-wash section over the sump. The plate receives and transfers water and gross garbage to a perforated trough secured to the side of the pre-wash section. Below the trough is a sink which communicates with the sump. The water flows into the sink and then into the sump. The gross garbage is retained in the trough. A spiral drive in the trough moves the gross garbage from the trough to a discharge end where it is removed.

    Abstract: In a warewashing machine, a power wash zone is adapted to function either in a pot washing mode or in a warewashing mode. A valve controls the flow of water into an upper manifold. In the pot washing mode when the flow of water into the upper manifold is decreased, the flow into a lower manifold is correspondingly increased. This results in an increase flow rate and pressure striking a pot.

    Abstract: A dolly for use in a straight sided flat bottom conveyor pan. The dolly is comprised of a frame, a pair of inner wheels and a pair of outer wheels. The inner wheels travel on an inner track of a conveyor pan and the outer wheels travel on an outer track of the conveyor pan. The leading wheels are secured to the frame along an axis which is coincident with a radius R. The trailing wheels are secured to the frame along an axis which coincident with a radius R.sup.1. The radii define an acute angle which will vary depending upon the actual dimensions of a curve through which the dolly will travel.

    Abstract: A horizontally sliding seal tight door is provided for a warewasher. The leading and trailing edges of the door are formed to mate with guide members secured to the sides of the door opening. When in the closed position the edges of the door in combination with the guide members direct the water contacting the door into the warewasher.

    Abstract: A scraper nozzle which provides a high pressure, uniform sheet of water. The nozzle is preferably used in the upstream portion of the prewash zone of a warewasher. Wares, such as dishes, are contacted by the sheet of water and the materials on the dishes are scraped off. The nozzle comprises a planar surface and an arcuate surface. The arcuate surface terminates in a discharge edge which is characterized by a plurality of protuberances. The water flows across the discharge edge and forms the uniform sheet of water.

    Abstract: A device for holding flatware which flatware is cleaned in a commercial warewashing machine is disclosed. The device is secured to a conventional dolly. A drive wheel on the device engages the conveyor pan. As the dolly moves, the drive wheel oscillates a frame about a fixed axis. The frame carries the baskets which loosely hold the flatware. As the dolly moves the flatware is tossed to and fro eliminating nesting to ensure all surfaces are contacted by the wash water.

    Abstract: A conveyor chain for a dishwasher conveyor which is adapted for movement in two directions. The links are pinned such that there is relative oscillatory movement in the horizontal plane and also pivotal motion in a vertical plane. The links include rollers which contact a conveyor pan and a limited top surface to carry trays. The top surface is designed such that if a tray is obstructed, the conveyor chain will continue to run.
