Abstract: The present application provides a novel process for the industrial preparation of rice cooked under vacuum, comprising the steps of cleaning, scalding, cooling, draining, drying, frying, mixing with sauces and/or solids, packaging, maceration, and cooking and sterilizing, as described and claimed herein.
